  • Salsa: We’re swapping the pizza sauce with salsa to give this chicken fajita pizza recipe that Tex-Mex flavor.
  • Chicken: I prefer boneless, skinless chicken breasts cut into small bite-sized pieces.
  • Shredded cheese: I love using a mixture of Colby Jack cheese and mozzarella cheese but use your favorite.

HOW TO MAKE CHICKEN FAJITA PIZZA: STEP-BY-STEP

Step 1: In a large bowl, whisk all ingredients for the chicken marinade, including olive oil, lime juice, minced garlic, smoked paprika, onion powder, garlic powder, chili powder, sugar, and cumin. Add the chicken pieces and toss to coat.

Ingredients
  

For the chicken (See Note 1)

  • 1 lb. chicken breasts, cut into small bite-sized pieces
  • 1 tbsp olive oil
  • 1/4 cup lime juice
  • 1 tbsp garlic, minced the best garlic chopper!
  • 1 tsp smoked paprika (sweet paprika is fine, too)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp sugar
  • 1 tsp cumin

For the pizza & veggies

  • 2 9 inch pre-made pizza crusts OR pizza dough formed into (2) 9 inch rounds one large pizza crust is also fine, use your favorite!
  • 1/2-1 cup salsa
  • 2 cups shredded cheese I used a mixture of Colby Jack and mozzarella–use you your fave!
  • 1/2 cup sliced red or yellow onion
  • 1 cup cubed bell peppers
  • 1 tbsp olive oil
  • 1 tbsp fajita or taco seasoning (optional) homemade or store-bought

Instructions
 

  • Prep: Preheat oven to 425°F.
  • Chicken Marinade: In a large bowl, whisk all ingredients for the chicken marinade (1 tbsp olive oil through cumin above). Add chicken and toss to coat. Let the chicken marinate while you prep the veggies.
  • Prep Veggies: Place sliced onions and bell peppers in a bowl, drizzle with 1 tbsp olive oil, and season with taco or fajita seasoning (if using). You can also just season the veggies with salt and pepper.
  • Cook Chicken: Heat a large skillet over medium high heat, add the remaining 1 tbsp of olive oil. When the oil is hot, add the chicken and cook for 5-6 minutes until cooked through.
  • Assemble Pizza: Spread salsa evenly over your pizza dough or crust. Add cheese, then peppers/onions, and cooked chicken.
  • Bake: Place pizza in your preheated oven and bake until cheese is melted and bubbly. The cooking time will depend on what type of pizza crust you use. Follow the package instructions if you are using a store-bought crust or dough (See Note 2).

Note 1: For extra yummy flavor, omit thee dry spices and marinate the chicken in this fajita marinade!
Note 2: If you’re a hard-core pizza lover, chances are you probably have a pizza stone in your kitchen. But in a pinch, you can use a baking sheet, a regular pizza pan, or even a cast iron skillet for heat retention.
