Trader Joe’s Weekly Meal Plan #1

LOBSTER BISQUE PASTA

Oh my word, this “viral” recipe is one that’s worth the hype. I love it so much and so does hubs! You can watch a video here, or just follow these simple instructions.

Ingredients

  • 16 oz. pasta 
  • Olive oil
  • 1 medium onion, diced
  • 1 container TJ’s Lobster Bisque
  • 1 package TJ’s Argentine Shrimp, thawed, cut into small pieces (I cut them in half or thirds depending how big they are).
  • 1 pint cherry tomatoes, halved
  • ½ cup parmesan cheese + more for serving 

    Optional Side Dish: Your fave TJ’s salad kit

Instructions

  • Cook pasta to al dente, drain, and set aside.
  • Cook onions in olive oil for 2-3 minutes until soft. Add shrimp and cook until heated through. 
  • Add lobster bisque and tomatoes and warm through. 
  • Add cooked pasta and toss gently until well coated with the sauce. Stir in parmesan cheese and serve. Garnish with more parm and serve!

SMOKED PULLED CHICKEN SANDWICHES

Another meal that is so easy and you won’t believe how good it is!

Ingredients

1 package TJs Hardwood Smoked Pulled Chicken
1 package cole slaw mix
4-5 tablespoons TJ’s Carolina Gold BBQ Sauce + more for drizzling
2 tbsp mayo
4 TJ’s brioche buns

Optional Side Dish: Tater tots, french fries, sweet potato fries

Instructions

  • Warm the pulled chicken according to package instructions.
  • While the chicken is warming, in a medium bowl, whisk together mayo and BBQ sauce. Add cole slaw mix and toss to combine.
  • Toast buns. Then, pile the chicken onto toasted buns, and drizzle with more BBQ sauce, if you like. Last, top the chicken sandwiches with the cole slaw and enjoy!

MANDARIN ORANGE CHICKEN LETTUCE WRAPS

I love this “recipe” because my kids eat the orange chicken with rice, and I have it on yummy lettuce wraps for extra veg! I also love it because it’s hardly a recipe — it’s perfect on crazed evenings!

Ingredients

1 package TJ’s Madarian Orange Chicken
1 head iceberg lettuce
Optional: Chili Onion Crunch, shredded carrots, scallions for topping!

Instructions

I just prepare the orange chicken (air fryer is best!!) according to the directions. Then, I chop it up a bit and pile it on lettuce wraps with a drizzle of Chili Onion Crunch. Top it with some shredded carrots and scallions!

EASY CROCKPOT SPAGHETTI AND MEATBALLS

TJ’s meatballs simmered with yummy marinara sauce…what’s not to love?!

Ingredients

1 package Trader Joe’s fully cooked Italian-style meatballs (frozen)
2 jars marinara sauce (I prefer the organic marinara sauce but use whatever sauce you like!)
2-3 tsp oregano or Italian seasoning
2 cups shredded mozzarella cheese
16oz. spaghetti

Optional Side Dish: Trader Joe’s Garlic and Cheese Breadsticks!

Instructions

  • In your crockpot, add marinara sauce, oregano, and frozen meatballs. Stir to combine.
  • Cook on low for 5-6 hours or on high for 3-4 hours.
  • Uncover, and add cheese. Cover and let the cheese melt while you cook up the spaghetti.
  • Serve cheesy sauce and meatballs over cooked spaghetti.

EASY SHAVED STEAK FAJITAS

The Trader Joe’s Shaved Steak is one of my all-time favorite products!! It cooks up soooo quickly and is perfect for fajitas!

Ingredients

1 lb (package) of TJ’s All-Natural Shaved Steak
Olive oil
1 medium onion, sliced
2 bell peppers (any color), sliced
1 package taco seasoning (or make your own)
8-10 flour tortillas
Salt/pepper
Fajita toppings: sour cream, avocado, and my personal fave: TJ’s Jalapeno Sauce

Possible side dish: black beans or TJ’s Spanish Style Rice.

Instructions

  • Heat a little olive oil in a large skillet. Add peppers and onions and cook 4-5 minutes until crisp-tender. Season with a little salt and pepper. Remove from skillet and set aside.
  • In the same skillet, add a bit more olive oil. Add shaved steak in an even layer. Cook 3-4 minutes until no longer pink. Season with taco seasoning and toss until the meat is well-coated with the seasoning. Add peppers and onions back to the pan and warm through.
  • Add meat/peppers and onions to warmed flour tortilla and top with your favorite fajita toppings!
