This recipe is on my main dinner rotation! It’s super easy healthy and you can use this fajita “mixture” in so many ways!
Pro tip: any leftovers are amazing mixed into scrambled eggs, just sayin’.
Traditional fajitas are great but you can also make fajita bowls, fajita pizza, or go low-carb and just enjoy the meat and veggies!
Also, this recipe gives me yet another reason to pour on one of my favorite TJ’s products: the Jalapeno Sauce!!!!!! I list this in the recipe card as “optional,” but really, who are we kidding?!
Here is what the shaved beef looks like…
If you love this steak as much as I do, you have to try these Shaved Beef Sandwiches and these incredible Philly Cheesesteaks made with shaved beef!
Trader Joe’s Shaved Steak Fajitas
Ingredients
- 1 tbsp olive oil
- 1 lb. Trader Joe's shaved beef (about 1lb.)
- 1-2 tbsp taco or fajita seasoning, divided make your own here (See Note 1)
- 1 medium onion, sliced
- 3-4 multi-colored bell peppers, sliced
- 8-10 tortillas I use the low-carb whole wheat tortillas from TJ's but use your fave!
- fajita toppings: TJ's Jalapeno Sauce, avocado, sour cream, fresh cilantro, etc.
Instructions
- Cook Beef: In a large skillet over medium-high heat, heat 1 tbsp of olive oil. When the oil is hot, add the shaved beef. Use tongs to gently break up beef so it lays evenly in the pan. Season meat with 2-3 tsp of taco seasoning. Cook 2-3 minutes on one side, flip/stir the beef and cook another 1-2 minutes until no longer pink.Transfer meat to a plate and cover with foil.
- Cook Veggies: To the same pan, add veggies (onions and peppers). Season veggies with 1-2 teaspoons of taco seasoning. Cook, stirring often for 5-6 minutes until veggies are crisp-tender (or done to your liking!).
- Add: Add beef (and all the juices from the plate!) into the pan with the veggies. Give everything a big stir. Season with a little salt, if needed.
- Finish: Pile the beef and veggies into tortillas and garnish with your favorite fajita toppings! Don't forget the Trader Joe's Jalapeno Sauce–it truly MAKES this dish!!!
