Cook Beef: In a large skillet over medium-high heat, heat 1 tbsp of olive oil. When the oil is hot, add the shaved beef. Use tongs to gently break up beef so it lays evenly in the pan. Season meat with 2-3 tsp of taco seasoning. Cook 2-3 minutes on one side, flip/stir the beef and cook another 1-2 minutes until no longer pink.Transfer meat to a plate and cover with foil.
Cook Veggies: To the same pan, add veggies (onions and peppers). Season veggies with 1-2 teaspoons of taco seasoning. Cook, stirring often for 5-6 minutes until veggies are crisp-tender (or done to your liking!).
Add: Add beef (and all the juices from the plate!) into the pan with the veggies. Give everything a big stir. Season with a little salt, if needed.
