I love this recipe, not only because it’s protein and nutrient-packed, but it’s great to make ahead and easy to reheat! Because of sports practices and #allthethings, sometimes our family has to eat at different times.

This meal is great because you can cook the sweet potatoes and chili ahead of time, then reheat whenever you’re ready to eat!

INGREDIENT NOTES AND SUBSTITUTIONS

Trader Joe’s Vegetarian Chili: You can also use  Trader Joe’s Turkey Chili instead of Vegetarian chili +  ground turkey, but I personally like the taste and added protein of adding my own turkey.

Jalapeno Crisps: These add so much flavor and a nice crunch! They aren’t super spicy so don’t be afraid to use them! You can also use crushed tortilla chips for the crunch 🙂

Casey’s Top Tip: Microwaving your sweet potatoes saves SO MUCH time vs. baking! Microwave them two at a time for fast, even cooking.

Ingredients
  

  • 4-6 sweet potatoes
  • 1 lb. ground turkey
  • 2 cans Trader Joe's Vegetarian Chili
  • 1/2 cup Trader Joe's Jalapeno Crisps
  • Your favorite toppings: sour cream/cottage cheese, shredded cheese, green onions/chives

Instructions
 

  • Prep Sweet Potatoes: Wash sweet potatoes and pat dry. Pierce each potato 4-5 times to allow the steam to escape.
  • Cook Sweet Potatoes: Place potatoes, 2 at a time in the microwave and cook on high for 5-6 minutes. Check if the potatoes are fork-tender. If not, cook in 1-minute increments until potatoes can be easily pieced with a fork. Repeat with the remaining sweet potatoes.
  • Cook Chili: While the potatoes are cooking, brown ground turkey in a medium skillet. Break up the meat with a wooden spoon as it cooks.  Add chili and stir until heated through.
  • Finish: Slice open the sweet potatoes and pile them with the chili mixture, jalapeno crisps, sour cream, scallions, and all of your favorite toppings!
