INGREDIENT NOTES & SUBSTITUTIONS

Trader Joe’s Thai Style Red Curry Sauce: This is a shelf-stable sauce found near the canned items at Trader Joe’s.

Protein: Need this recipe to be vegetarian? No problem! This curry is great with tofu and/or chickpeas, too if you want to swap or add protein. Note: The Trader Joe’s red curry sauce contains egg yolks (go figure!) so it is not considered vegan.

Veggies: You can mix and match the veggies however you like! I love the bell peppers, but I will often add green beans, sugar snap peas, and carrots.

Basil: Italian basil or Thai basil are just fine–just don’t leave this out! The fresh herbs truly make this dish special!

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb. chicken breast, cut into small bite-sized pieces
  • 1-2 bell peppers, sliced feel free to include more fresh veggies such as snap peas, green beans, or carrots.
  • 1 11 oz. bottle of Trader Joe's Thai Style Red Curry Sauce
  • 1 tbsp brown sugar
  • 1 cup fresh basil leaves, torn or roughly chopped
  • rice, for serving

Instructions
 

  • Cook chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook 3-4 until barely cooked through. Add bell pepper and cook 2 minutes more stirring often.
  • Add and simmer: Add red curry sauce and brown sugar. Stir to combine. Reduce heat to low and simmer for 3-4 until red pepper is crisp-tender and chicken is cooked through.
  • Finish: Turn off the heat and stir in basil. Allow basil to wilt for a minute and serve over rice.
