You guys, this recipe. Omg, SO MUCH flavor in so little time! I love Peri Peri Chicken and Rice but it can take at LEAST 45 minutes to make it the traditional way!

I wouldn’t call this a “hack” (well, maybe I would), but using Trader Joe’s frozen Chimichurri Rice cuts the cook time by more than half! #winning! And TJ’s Peri Peri Sauce better than the original Nando’s in my opinion!

Ingredients
  

  • 1-2 tbsp olive oil
  • 1-1 1/2 lbs. boneless, skinless chicken thighs
  • 2 packages frozen Trader Joe's Chimichurri Rice
  • 1/2 cup Trader Joe's Peri Peri Sauce + more for serving
  • 1/4 cup chicken stock
  • a few sprinkles of TJ's Aglio Olio optional, but highly recommended!!

Instructions
 

  • Prep: In a large bowl or gallon-size zip-top bag, add your chicken. Pour in your peri peri sauce and stir until the chicken is well-coated. Marinate chicken for 10 minutes or up to overnight.
  • Cook Chicken: Heat olive oil in a large pan over medium-high heat. When the oil is hot, add chicken thighs. Cook chicken 4-5 minutes on one side. Then flip, and cook 2-3 minutes on the second side or until cooked through to an internal temperature of at least 170° degrees.
    Transfer chicken to a plate and cover with foil.
  • Cook Rice: To the pan, add the chicken stock and bring to a boil. With a wooden spoon, scrape off all the yummy browned bits of chicken from the bottom of the pan.
    To the pan, add rice. Cook the rice for about 5-6 minutes, stirring often. The rice should be heated through and most of the liquid should be evaporated.
  • Finish: Add the chicken (with all the juice from the plate!) back to the pan. Cook, uncovered for 1-2 minutes more until chicken is heated through. Sprinkle everything with the Aglio Olio seasoning (if using) and drizzle with more peri peri sauce!
