  • 2 8.8oz. containers Trader Joe's frozen Spinach and Artichoke Dip
  • 2 tsp olive oil
  • 4 cooked chicken sausage links, sliced into rounds Such as these or similar. Feel free to substitute another protein like chicken or Italian sausage.
  • 1 tsp garlic powder
  • juice from one lemon + Parmesan cheese (optional, for serving)

Instructions

  • Cook Pasta: Cook pasta according to package instructions. Drain and set aside. Reserve about 1/4 cup of the starchy cooking liquid, if you remember!!
  • Brown Sausage: In a large skillet over medium-high heat, add olive oil. When the oil is hot, add your sausage. Cook your sausage for 3-4 minutes until nicely browned.
  • Warm Dip: While the sausage is cooking, heat up the spinach and artichoke dip. ln a microwave-safe bowl, place FROZEN dip. Heat dip in the microwave for about 3 minutes, stir, then heat again for 3-4 minutes, or until warm and melty. Keep an eye on it, and stir occasionally.
  • Finish: Add pasta to the skillet with the cooked sausage. Then, add warm dip and stir, stir stir until the pasta is well-coated with the cheesy dip! Add a splash or two of the reserved pasta water if the consistency is too thick.
Sprinkle in your garlic powder and stir well. Finish with a little lemon juice and a sprinkle of Parmesan cheese, if you like! Serve right away!

Notes

Note: If you’d like to add extra veggies, knock yourself out! Extra spinach, cherry tomatoes, or even sauteed mushrooms would all be delicious!
