Bruschetta Chicken
This bruschetta chicken is a 5-ingredient wonder…and FULL of flavor! It comes together in about 15 minutes and is perfect for busy weeknights!
Optional side dishes: Serve this chicken over pasta/orzo. Or, for a lighter meal, just pair it with a simple green salad.
Egg Roll Bowl
This meal is light, healthy and super quick and easy to make! It has just FIVE ingredients and it uses two of my FAVORITE Trader Joe’s shortcut ingredients!
Optional side dishes: Serve over rice or in lettuce cups.
Shaved Beef Fajitas
Remember the shaved beef sandwiches from Meal Plan #5?? This recipe uses the same shaved beef but in a whole new way! These fajitas are super simple and easy to make!
Optional side dishes: Trader Joe’s Mexican rice or black beans.
Turkey Chili Sweet Potatoes
I LOVE this recipe for a nice, light, and healthy meal (anyone working on their summer body??!). You can keep it vegetarian and omit the turkey if you like!
Optional side dishes: A simple green salad.

This recipe is for my “weeknight gourmet” pizza, but I also give you 4 other ideas as well! Sky’s the limit! Be creative!
