INGREDIENT NOTES AND SUBSTITUTIONS
Beef bulgogi: Trader Joe’s beef bulgogi is one of my favorite TJ’s items! It’s found in the freezer section and it’s meant to be cooked from frozen (perfect if you’re like me and forget to defrost things!)
Scallion pancakes: These are also found in the Trader Joe’s freezer section right near the beef bulgogi! The just need a few minutes in a skillet to crisp up.
Veggies: Mix and match the veggies/toppings on your tacos! Some ideas: shredded cabbage, radishes, pickled veggies, bean sprouts, cilantro, and even kimchi.
EXPERT TIPS
- Cook beef from frozen: The beef bulgogi is meant to be cooked straight from frozen and I can attest it’s SO much better that way. You can see the difference when I cooked in both ways in my beef bulgogi review.
- Don’t over stir: Stir your beef bulgogi a few times while cooking, but don’t stir so often that you don’t allow the wonderful sugars in the meat to caramelize and turn that deep brown color–soooo much yummy flavor!
- Crisp up to pancakes: Green onion pancakes are best when pan-fried until golden brown and crispy. Use just a little olive oil and cook over medium heat—don’t rush it!
- Make ahead: Dice the cucumbers, shred the carrots, and make the sriracha mayo while the beef is cooking to make assembly quick and easy. You can even prep everything in advance and and just warm up the beef and scallion pancakes for dinner in minutes
How to Serve
- Add a salad: Balance the bold flavors with a light side dish—like this crunchy Asian slaw with sesame vinaigrette or a simple cucumber salad with rice vinegar and sesame seeds.
- Build your own! We love to serve everything family-style and let everyone build their own tacos! Set out the bulgogi, green onion pancakes, cucumbers, carrots, and sriracha mayo in separate bowls with optional extras like shredded lettuce, kimchi, jalapeños, or fresh cilantro.
- Make it a bowl: Swap the scallion pancakes with Trader Joe’s jasmine rice and make beef bulgogi bowls!

Trader Joe’s Beef Bulgogi Tacos
Ingredients
For the beef bulgogi tacos
- 1 16 oz. package of Trader Joe's Beef Bulgogi in the freezer/cold case, keep frozen-do not thaw
- 1 cup cucumbers, diced or sliced
- 1 cup shredded carrots
- 1-2 tsp olive oil
- 4-6 Trade Joe's Scallion Pancakes in the freezer/cold case
For the sriracha mayo
- 1/2 cup mayo
- 1 tbsp sriracha sauce more for extra spice!
- 1 tsp sugar
- 1 tsp soy sauce
- a pinch of salt
Instructions
- Cook Beef: In a skillet over medium-high heat, add the frozen beef bulgogi. Cook, for 10-11 minutes, stirring a few times. The beef is already fully cooked, you just want to warm it through and get a little dark caramelization on the meat.Tip: Stir your beef bulgogi a few times while cooking, but don't stir so often that you don't allow the wonderful sugars in the meat to caramelize and turn that deep brown color–soooo much yummy flavor!
- Make the sriracha mayo: While the beef is cooking, make the mayo. In a small bowl, combine all the ingredients and whisk until smooth. Set aside.
- Warm scallion pancakes: In a medium skillet, heat 1-2 tsp of oil – enough to lightly coat the bottom of the pan. When the oil is hot, add one green onion pancake. Warm on one side for about a minute, then flip and warm the other side for an additional minute. The pancakes should start to brown slightly. . Remove pancakes from the skillet and cover with foil to keep warm. Repeat for all of the pancakes.
- Finish: Pile a generous amount of beef bulgogi into each warm green onion pancake. Top with cucumber, shredded carrots, and a generous drizzle of sriracha mayo!
