This Simple Sweet Corn Salad is bursting with flavors from cherry tomatoes, red onion, fresh herbs, and lime. Topped with lots of yummy feta crumbles, this will be your go-to summertime salad!

Summer is in the air and ya’ll know what that means around my house…BBQ and “grillin’ out!” I get asked a lot what side dishes are good for grilled meats and my answers are almost always this Simple Sweet Corn Salad OR my Perfect Orzo Salad. My Air Fryer Roast Potatoes with Chipotle Mayo are also a MAJOR hit with anything grilled.

This corn salad is DELISH, but also, it could not be easier! Thus the name: Simple Sweet Corn Salad!

HOW TO MAKE SIMPLE SWEET CORN SALAD

It’s not called SIMPLE Sweet Corn Salad for nothing! This salad comes together in no time at all! The longest part is letting the corn thaw, but you can do that the night before or in the microwave 🙂

  • Allow the corn to thaw (or defrost in the microwave if you are in a time pinch) and drain any excess water (you don’t want your salad to get soggy).
  • Toss corn with the onion, tomatoes, herbs, lime juice and feta cheese.
  • Taste and season with salt and pepper if you think you need it.
  • Cover and refrigerate until you are ready to serve.

What can be served with this sweet corn salad?

This salad is PERFECT with grilled meats! Grilled chicken, steak, pork chops, ribs…anything! It also goes AMAZINGLY (is that a word??!) with my Air Fryer BBQ Chicken and even works well on “taco night” when you’re making my Crockpot Buffalo Chicken Tacos or Spicy Pork Tacos with Cilantro Slaw!

Do I have to use frozen sweet corn?

Nope! I feel like it’s the easiest way to get the fresh corn taste, but you can absolutely use canned sweet corn or fresh corn! You technically don’t HAVE to cook fresh sweet corn for this salad, but I still like to boil it for a few minutes OR throw it on the grill!

How do you store this corn salad?

This salad will keep up to 3 days in the fridge but I really think it should be served within 2 days. There won’t be any leftovers anyway! However, in case there are, it’s a great topping for tacos, too! 🙂

Additions and substitutions:

Here are some great things you can add or substitute to this corn salad:

  • Avocado!! Because….why not??!! It’s literally perfect in this salad!
  • Red pepper/green pepper
  • Scallions/green onions
  • Cucumber
  • If you like cilantro, feel free to add that in place of the basil and parsley.
  • Substitute the Feta cheese with Président Le Blue Cheese, Cotija cheese or omit the cheese all together.

Ingredients
  

  • 6 cups frozen sweet corn, thawed canned sweet corn and fresh corn work, too!
  • 1 pint cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/2 cup basil, chopped
  • 2 tbsp parsley, chopped
  • 1/4 cup fresh lime juice (2-3 limes)
  • 1/2 cup Président Feta Crumbles
  • 2 tbsp extra virgin olive oil
  • salt/pepper to taste

Instructions
 

  • In a large bowl, combine all ingredients. Toss until well-combined.
  • Season with salt and pepper. Top with more Président Feta, if desired!
  • Cover and refrigerate until ready to serve.
