This post is all about making amazing, easy tortilla pizzas– two ways! These simple pizzas are perfect for a quick lunch and also make a fun family dinner idea! Because really, who can argue with pizza?!

There is no argument about pizza at my house and these tortilla pizzas are no exception! Before I got my amazing Cosori Toaster Oven/Air Fryer (life-changing!) a few months ago I made them in the skillet, which is also super quick and simple.
What’s so great about tortilla pizza?
- They are QUICK (we are talking 5 minutes!)
- These two methods get the tortilla nice and crispy, perfect if you love east coast thin crust pizza like I do!
- Depending on what toppings you use, they are fairly low cal! A simple Margherita tortilla pizza is less than 300 calories.
What are the two methods to make tortilla pizza?
1. Stovetop:
This is how I made these pizzas before I got my life-changing toaster oven/air fryer. The basic method is:
- Place tortilla in skillet and “toast” it for a minute or so.
- Add cheese and a few toppings.
- Cover until cheese is melted and tortilla is crisp.

2. Toaster Oven
This method is even easier and totally hands-off.
- Add toppings to tortilla.
- Bake in the toaster oven on the wire rack.
- 6 minutes ’til perfection!

What are some tips and tricks?
- Since the tortillas are fairly thin, I don’t tend to load my tortilla pizza with a zillion toppings. Simple is best.
- Trader Joe’s “Truly Handmade” tortillas work really well for this because they are on the thicker side. Otherwise, any flour tortilla will work.
- I’ve found the 8-inch size or smaller works best.
What are some topping ideas?
Honestly, simple is best for these pizzas! Here are some of my family’s favorite combos:
- Margherita: Fresh mozzarella, basil, a sprinkle of parm
- Pepperoni
- Pepperoni, olives, and green pepper
Easy Tortilla Pizza | Skillet Method
Ingredients
- 1 8 inch flour tortilla
- 1/4 cup marinara or pizza sauce
- 1/4 cup mozzarella cheese see notes
- fresh basil and parmesan for sprinkling
Instructions
- Heat skillet over medium heat (you do not want it too hot)
- Place tortilla on heated skillet and warm for 90 seconds or until you see the tortilla bubbling a bit.
- Add sauce, cheese, and toppings to the tortilla.
- Cover skillet (I use a cookie sheet if I don't have a lid) and cook for 3-4 minutes, checking to ensure tortilla is not burning. If the tortilla is browning too much before the cheese is melted, just reduce the heat.
- When cheese is melted, remove tortilla from skillet with a spatula. Add basil and a sprinkle of parm (if using), cut into wedges and serve!
Notes
- When you add the cheese, add any other toppings at this time as well. Just try not to load the pizza with too many toppings or it will be harder for the tortilla to get crispy.
Easy Tortilla Pizza | Toaster Oven Method
Ingredients
- 1 8 inch flour tortilla
- 1/4 cup marinara or pizza sauce
- 1/2 cup mozzarella cheese see notes
- basil and parmesan for sprinkling
Instructions
- Preheat toaster oven to 425 degrees.
- Assemble your tortilla pizza directly on the toaster oven's wire rack. Add sauce, cheese and toppings (see notes).
- Bake for 6-7 minutes until cheese is bubbly. Cut into wedges and serve!
Notes
- When you add the cheese, add any other toppings at this time as well. Just try not to load the pizza with too many toppings or it will be harder for the tortilla to get crispy.
