RECIPE INGREDIENTS
You’ll need the following ingredients to make this Creamy Cucumber Salad:
INGREDIENT NOTES
Cucumbers: English cucumbers are perfect for this salad as they have a thin skin, small seeds, and crisp texture. I used two large cucumbers for this creamy cucumber salad recipe and cut them into medium-thin slices using a sharp knife. You can also use a mandoline slicer if you want thinner, perfectly uniform slices.
Salad Dressing: A simple blend of sour cream, mayonnaise, red wine vinegar, dried dill, sugar, onion powder, garlic powder, and salt adds tangy and savory flavor to the cucumbers and onions.
HOW TO MAKE SIMPLE CUCUMBER SALAD WITH MAYO: STEP-BY-STEP
Here are some quick visual instructions. Remember that full instructions with exact ingredients will be in the printable recipe card below!
Steps 1&2: In a large bowl, whisk together the dressing ingredients until creamy and smooth. You can do this directly in the bottom of the bowl to save extra dishes. Taste and season with a bit more salt if needed.
To the same bowl, add sliced cucumbers and onions.
Step 3: Toss well until all cucumber slices and red onion slices are fully coated with the tangy dressing. Chill this fresh cucumber salad for at least one hour or enjoy right away.
Make-Ahead Tip
Prepare the salad dressing up to 1 week in advance and store it in a small mason jar in the fridge. Slice the cucumbers and onions up to a day ahead of time, keeping them in the fridge until you’re ready to toss everything together to serve this simple salad!
STORAGE
Storage: If you have any leftover cucumber salad, store it in an airtight container. This simple side dish is best eaten within 24 hrs as the cucumbers will start to soften and lose their crunchy texture. They’ll also release water and dilute the dressing.
ADDITIONS & SUBSTITUTIONS
ADDITIONS:
- Fresh herbs: In addition to dried dill weed, you can also add fresh dill or parsley to add some fresh flavors.
- Lemon juice: Squeeze some fresh lemon juice to the cucumber salad dressing.
SUBSTITUTIONS:
- Swap any fresh cucumbers: English or Persian cucumbers are great because they are seedless cucumbers with a thin skin, but try other varieties. Tip: If you find that regular cucumbers have large seeds, scoop them first to keep the moisture low.
- Try a different vinegar: Swap the red wine vinegar with white vinegar or apple cider vinegar.
- Lighten up: The sour cream dressing makes this perfect side dish creamy and delicious, but you can swap that with plain Greek yogurt for a healthier twist or use reduced-fat sour cream.
