I used two large cucumbers for this creamy cucumber salad recipe and cut them into medium-thin slices using a sharp knife. You can also use a mandoline slicer if you want thinner, perfectly uniform slices.

Salad Dressing: A simple blend of sour cream, mayonnaise, red wine vinegar, dried dill, sugar, onion powder, garlic powder, and salt adds tangy and savory flavor to the cucumbers and onions.

HOW TO MAKE SIMPLE CUCUMBER SALAD WITH MAYO: STEP-BY-STEP

Dressing Ingredients

  • 1/2 cup sour cream
  • 3 tbsp mayo
  • 3 tbsp red wine vinegar
  • 1 tbsp dried dill
  • 1 tbsp white sugar
  • 1/2 tsp kosher salt
  • 1/4 tsp dried onion (or onion powder)
  • 1/2 tsp garlic powder

Salad Ingredients

  • 2 large English cucumbers, thinly sliced about 4-5 cups
  • 1/2 medium red onion, thinly sliced

Instructions
 

  • Make the dressing: In a large bowl, whisk together dressing ingredients. Taste, and season with a bit more salt, if needed.
  • Add & Toss: To the same bowl, add cucumbers and onions. Toss well until cucumbers and onions are fully coated with the dressing.
    Note: If you want to control the amount of dressing in this recipe, mix the dressing in a small bowl. Add the veggies to a larger bowl and drizzle on as much (or as little) dressing as you like!
  • Chill (optional): Chill the salad for at least one hour or enjoy right away!
