This Creamy Cucumber Salad with Mayo is a light and refreshing side that's perfect on a hot summer's day. Crisp cucumbers, red onions, and a creamy dressing made with mayo, sour cream, and lots of fresh dill, this salad is a perfect addition to any cookout with friends or a weeknight summer dinner at home!

Ingredients
  

Dressing Ingredients

  • 1/2 cup sour cream
  • 3 tbsp mayo
  • 3 tbsp red wine vinegar
  • 1 tbsp dried dill
  • 1 tbsp white sugar
  • 1/2 tsp kosher salt
  • 1/4 tsp dried onion (or onion powder)
  • 1/2 tsp garlic powder

Salad Ingredients

  • 2 large English cucumbers, thinly sliced about 4-5 cups
  • 1/2 medium red onion, thinly sliced

Instructions
 

  • Make the dressing: In a large bowl, whisk together dressing ingredients. Taste, and season with a bit more salt, if needed.
  • Add & Toss: To the same bowl, add cucumbers and onions. Toss well until cucumbers and onions are fully coated with the dressing.
    Note: If you want to control the amount of dressing in this recipe, mix the dressing in a small bowl. Add the veggies to a larger bowl and drizzle on as much (or as little) dressing as you like!
  • Chill (optional): Chill the salad for at least one hour or enjoy right away!
