Let’s jazz up our boring old tacos with ground chicken and two secret ingredients: Ranch dressing and Trader Joe’s Roasted Corn! This is one of hubby’s top meals right now — he may or may not have been caught eating leftovers as a “dip” with tortilla chips! (Genuis, BTW!)

INGREDIENT NOTES

Ranch Dressing: Ok, so the “new” Trader Joe’s Buttermilk Ranch Dressing is my absolute FAVE! It has more of a “gourmet” ranch vibe and is very “herb-forward” and fresh-tasting. If you love Hidden Valley or the other Trader Joe’s ranch, you MAY not like this one, but GIVE IT A TRY!!! I’m hooked!

Roasted Corn: This is found in the frozen veggie section. If you can’t find it, regular frozen corn is fine, too.

TWO PERFECT WAYS TO USE LEFTOVERS

  • Dip: Add a little extra cheese over the top, and heat the meat mixture up in the microwave. Use it as a cheesy dip for tortilla chips! ((that is hubby’s contribution to this recipe!!!))
  • Salad: I put the meat mixture on top of salad greens or a TJ’s bagged salad and drizzle it with TJ’s Guacasalsa. It’s the perfect little leftover lunch!

Ingredients
  

  • 1 lb. ground chicken
  • 2 tsp chili powder* See Note 1
  • 1 tsp garlic powder* See Note 1
  • 1 tsp smoked paprika* See Note 1
  • 1 14.5 oz. can diced fire-roasted tomatoes with chilis drained WELL
  • 1/2 cup ranch dressing See Note 2
  • 2 cups Trader Joe's frozen roasted corn
  • 1-2 cups shredded cheddar cheese I prefer sharp cheddar
  • 8-10 small tortillas
  • juice of 1 lime
  • optional garnishes: red onion, cilantro, green onions

Instructions
 

  • Cook Meat: In a large skillet over medium heat, add chicken. Cook 4-5 minutes until no longer pink, breaking the meat up as it cooks. Pro Tip: Use a potato masher in the last minute of cooking to get the mear broken up nice and fine.
    Season the meat with chili powder, garlic powder, and smoked paprika (or taco seasoning).
  • Add: Add in roasted corn and drained tomatoes. Give everything a big stir and cook 4-5 minutes more until everything is heated through.
  • Add: Stir in ranch dressing and cheese. Cook for a minute or so until cheese is melted.
    Note: If your meat mixture seems to have too much moisture (if you didn't drain the tomatoes super well), no worries. Just continue to cook it for a few minutes more–it will also thicken as it sits.
  • Finish: Add lime juice, stir. Pile your taco meat mixture into warmed tortillas. Top with red onion, cilantro, and green onions, and enjoy!

Notes

Note 1: You can replace these spices with a couple of tablespoons of your favorite taco seasoning, if you like. 
Note 2: My ride or die Ranch is the “newer” one from the Trader Joe’s produce case. I am not a fan of TJ’s shelf-stable ranch that you find near the salad dressing. Just use your favorite!
