These Trader Joe's Turkey Chili Sweet Potatoes are a protein+ nutrient-packed meal! It's super simple and easy to customize based on everyone's favorite toppings!
Your favorite toppings: sour cream/cottage cheese, shredded cheese, green onions/chives
Instructions
Prep Sweet Potatoes: Wash sweet potatoes and pat dry. Pierce each potato 4-5 times to allow the steam to escape.
Cook Sweet Potatoes: Place potatoes, 2 at a time in the microwave and cook on high for 5-6 minutes. Check if the potatoes are fork-tender. If not, cook in 1-minute increments until potatoes can be easily pieced with a fork. Repeat with the remaining sweet potatoes.
Cook Chili: While the potatoes are cooking, brown ground turkey in a medium skillet. Break up the meat with a wooden spoon as it cooks. Add chili and stir until heated through.
Finish: Slice open the sweet potatoes and pile them with the chili mixture, jalapeno crisps, sour cream, scallions, and all of your favorite toppings!
