INGREDIENT NOTES, ADDITIONS & SUBSTITUTIONS
Chicken breasts: The chicken breasts from Trader Joe’s usually come pretty thin, but if yours are thicker, slice them in half lengthwise for quicker cooking. You can also use chicken breast tenders for even quicker cooking! Chicken thighs absolutely work too.
Trader Joe’s Spinach and Artichoke Dip: Not only is this dip my favorite spinach and artichoke dip, it also makes great meals like this chicken recipe, and this delicious spinach and artichoke pasta! The dip can be found in the frozen section at TJ’s.
Cheese: I mix up whatever type of cheese I have in my fridge, but my favorite is provolone! Other good options are mozzarella, Swiss, and fontina.
Spices: I just use salt, pepper and garlic powder but feel free to add extra spices like Trader Joe’s Aglio Olio seasoning, onion powder, or even a little smoked paprika.

CASEY’S TIPS
- Thin chicken: Slicing your chicken breasts thinly allows for quicker cooking, which we all need on a busy weeknight! If you buy the giant chicken breasts at Costco, just slice them in half lengthwise. Trader Joe’s chicken breasts are usually fairly thin and even.
- Check the chicken: The cooking time will depend on the thickness of your chicken. For super thin chicken or chicken breast tenders, start checking around the 20 minute mark. We are looking for an internal temperature of 165°F using an instant-read themometer.
- Storage: Store leftovers in an airtight container in the refrigerator for 2-3 days. You can reheat leftovers in the microwave or in the oven for 10-15 minutes until heated through.
How to Serve
- Green salad: If you want to keep it light and low carb, this dish pairs perfectly with this simple arugula salad with lemon and Parmesan.
- Mashed potatoes: Trader Joe’s frozen mashed potatoes are a perfect complement to this creamy chicken. Diced roasted potatoes also work well!
- Veggies: Roasted or steamed broccoli, asparagus, or green beans are the perfect side! Trader Joe’s has all three in the frozen section and they can easily be whipped up while the chicken bakes.
- Crusty bread or garlic bread: Let’s be honest, we need something to scoop up any extra spinach and artichoke dip on our plates! This is my favorite garlic bread recipe.

Trader Joe’s Spinach and Artichoke Dip Chicken
Ingredients
- 1-2 lbs. boneless, skinless chicken breasts, sliced thin about 3-4 thinly sliced chicken breasts
- 1 tsp. garlic powder
- 1 tsp. sea salt or kosher salt
- 1/2 tsp. freshly ground black pepper
- 1 8.8 oz. container of Trader Joe's frozen Spinach and Artichoke Dip
- 1-2 cups mozzarella or Provolone cheese about 3-4 Provolone slices
Instructions
- Prep the dip: Preheat oven to 375°F. Place frozen spinach and artichoke dip in a microwave safe dish. Microwave for 3 minutes and stir. If there are still frozen parts, continue to microwave in 15 second increments until heated through (does not have to but totally hot and bubbly, just warm).
- Prep the chicken: While the dip is warming, place chicken in a 9×13 casserole dish or on a baking sheet. Season both sides with salt, pepper, and garlic powder.
- Spread: Spread the prepared spinach and artichoke dip generously over the chicken breasts (about 2 generous tablespoons per chicken breast – you may have a little leftover). Then, sprinkle the cheese over the top.
- Bake: Bake for 30-40 minutes until the chicken is cooked through and reaches an internal temperature of 165°F. Broil for 3-4 minutes more to get the cheese brown and bubbly. Serve right away!
