INGREDIENT NOTES & SUBSTITUTIONS

Mini Sheet Cakes: I used the Chantilly Cream Vanilla Bean cake for this recipe because it’s available year -round, but feel free to use any flavor you like. This “recipe” is incredibly flexible.

Decorations and embellishments: You can never go wrong with fresh fruit and mint, but again, sky’s the limit! Some other ideas include: sprinkles, chocolate shavings, edible flowers, candies, nuts, coconut, and this delicious strawberry crunch topping!

Casey’s Top Tip: Place small pieces of parchment paper under the cake while you are frosting it with the whipped cream frosting. When you’re done, gently pull the pieces of parchment out from under the cake for a completely clean serving plate. I learned this trick from Ina Garten!

Upgraded Trader Joe’s Mini Sheet Cake

Ingredients
  

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 3 Trader Joe's Mini Sheet Cakes
  • fresh berries, fresh mint, edible flowers, sprinkles, etc. for decorating

Instructions
 

  • Make the whipped cream frosting: In a large mixing bowl, beat the hevay cream with an electric mixer until soft peaks begin to form. Add the powdered sugar and vanilla. Continue beating until stiff peaks form. Place in the fridge.
  • Stack cakes: Use a knife to even out the pre-made frosting layer on each cake. Spread the frosting to the edge of the cake. Then place one cake on a serving plate and stack the other two on top.
  • Frost the cake: With a spatula or knife, carefully spread the whipped cream frosting evenly over the entire cake.
  • Decorate: Use berries and mint to decorate the top of the cake and the serving tray.

    1. Hi! You would have to check the Trader Joe’s packing for the exact cake ingredients. This is a premade cake from TJ’s–I just adding some icing and decorations to it. It’s “semi-homemade!” 🙂 XO ~ Casey
