Tried and True…
I have been making a version of this orzo salad for over 15 years–it’s always requested for BBQ’s and potlucks! The original recipe has a lemon vinaigrette, but once I tried it with Trader Joe’s Garlic Spread Dip, it quickly became the only way I’d make it (plus it’s easier)!
You can easily make this ahead of time – I like to have an extra tub of garlic spread on hand and stir in a bit more right before serving. Enjoy one of our family’s favorites!

You’ll need the following ingredients to make Trader Joe’s Garlic Parmesan Orzo Salad:

INGREDIENT NOTES & SUBSTITUTIONS
Garlic Spread Dip: This creamy “dip” is found at TJ’s in the refrigerated section near the dips, pestos, cheeses, etc.
Fresh Mint: Mint is the perfect pairing for the flavors in this salad, but fresh basil (or a combo of both basil and mint!) works well, too.

Casey’s Top Tip: Of course this salad is great chilled, but I prefer serving it closer to room temperature. If you make it ahead, pull it out of the fridge about 30 minutes before serving and add a some extra Parmigiano on top!

Trader Joe’s Garlic Parmesan Orzo Salad
Ingredients
- 1 16oz. package orzo
- 1 8oz. tub of Trader Joe's Garlic Spread Dip
- 1/2 cup Parmigiano-Reggiano or Parmesan cheese, grated
- 2 large lemons – juice and zest about 1-2 tbsp zest and 1/4 cup juice
- 1 8.5oz. jar of sliced sun-dried tomatoes, drained Trader Joe's sells pre-sliced sun-dried tomatoes
- 1 cup kalamata olives, sliced
- 1/2 cup fresh mint, chopped
- 1/2 tsp EACH sea salt and freshly ground black pepper
Instructions
- Prep: Boil orzo according to package instructions, drain well, and transfer to a large bowl. While the orzo is still warm, add garlic spread and toss until evenly distributed. Allow the pasta to cool for about 15 min. I like to pop it in the fridge while I prep the other ingredients.
- Add & Toss: When the pasta has cooled a bit, add the Parmesan cheese, sun-dried tomatoes, kalamata olives, lemon juice, zest, and fresh mint. Toss until well combined. Season with salt and freshly ground black pepper + more lemon juice, if needed.


Love love love this! The flavor is absolutely amazing. I did leave out the mint because that’s just not a flavor I thought I’d enjoy , but I did add a lot of extra lemon zest for freshness. It was so good!
This orzo salad has been a staple for YEARS at our house. It’s also requested and parties and BBQs. I hope you love it as much as we do!
