Trader Joe's Garlic Parmesan Orzo Salad

If you haven't tried Trader Joe's Garlic Spread Dip, run and grab yourself a tub RIGHT NOW! There are dozens of ways to use it, but one of our faves is as a "dressing" for this incredible Garlic Parmesan Orzo Salad! Serve this salad with chicken or fish - it's also perfect alongside burgers or any grilled meats!

Ingredients
  

  • 1 16oz. package orzo
  • 1 8oz. tub of Trader Joe's Garlic Spread Dip
  • 1/2 cup Parmigiano-Reggiano or Parmesan cheese, grated
  • 2 large lemons - juice and zest about 1-2 tbsp zest and 1/4 cup juice
  • 1 8.5oz. jar of sliced sun-dried tomatoes, drained Trader Joe's sells pre-sliced sun-dried tomatoes
  • 1 cup kalamata olives, sliced
  • 1/2 cup fresh mint, chopped
  • 1/2 tsp EACH sea salt and freshly ground black pepper

Instructions
 

  • Prep: Boil orzo according to package instructions, drain well, and transfer to a large bowl. While the orzo is still warm, add garlic spread and toss until evenly distributed. Allow the pasta to cool for about 15 min. I like to pop it in the fridge while I prep the other ingredients.
  • Add & Toss: When the pasta has cooled a bit, add the Parmesan cheese, sun-dried tomatoes, kalamata olives, lemon juice, zest, and fresh mint. Toss until well combined. Season with salt and freshly ground black pepper + more lemon juice, if needed.
