INGREDIENT NOTES & SUBSTITUTIONS

Roasted Corn: Trader Joe’s frozen roasted corn is easy and delicious, but you can use any canned or frozen corn you like.

Ground Chicken: Ground turkey is a great substitute.

Salsa Verde: If you can’t find the Trader Joe’s Salsa Verde, just use any green salsa.

Toppings: Chili toppings are alway optional…but are they?! My favorite topping are the Trader Joe’s Elote Corn Dippers!

EXPERT TIPS

  1. Break up the meat: As the ground chicken cooks, break the meat up with a wooden spoon OR my favorite tool: a potato masher! This gets the meat broken up nice and fine!
  2. Simmer: This dish comes together quickly and is packed with flavor, even if you only simmer it for about 15 minutes. But feel free to cook it longer! If it gets a bit thick, add more chicken stock.
  3. Meal prep: I LOVE this dish for meal prep because it keeps so well in the fridge and gets better every day! Store in an airtight container for 4-5 days.
