INGREDIENT NOTES & SUBSTITUTIONS

Dumplings/Potstickers: I usually use the Trader Joe’s chicken gyoza just because the package comes with exactly 20 potstickers that are needed for this recipe. But you can use whatever brand potsticker you like.

Thai-style red curry sauce: The Trader Joe’s curry sauce makes this dish super saucy and full of flavor. However, you can also just use 2-3 tbsp. of red curry paste whisked into unsweetened coconut milk.

Soyaki sauce: Feel free to use your favorite teryaki sauce if you don’t have the Soyaki sauce. We love this Soy Vey sauce.

Broccoli: Broccoli isn’t included in the viral recipe and the recipe it perfectly delicious without it! However, I love adding broccoli for a little veg, and it makes it more of a complete meal.

Garnishes: My favorite “garnish” is Trader Joe’s Crunchy Chili Onion for more flavor and heat! Green onions, cilantro, and sesame seeds are also delicious.

DELICIOUS VARIATIONS

Potstickers: Swap chicken potstickers for pork, shrimp, or veggie dumplings.

Sauce twist: Try green curry paste or a peanut butter sauce in place of the red curry.

Veggies: This recipe is also delicious with baby spinach, baby bok choy, snap peas, zucchini, or carrots. Like with the broccoli, add the veggies about 20 minutes into baking so they stay nice and crisp-tender.

CASEY’S TIPS

  1. Potstickers: No need to thaw your potstickers. Just layer them in the pan frozen.
  2. Cut veggies small: If you’re using broccoli or another veggie that needs to be cut, chop the pieces small for quick cooking. If you are adding spinach, add it toward the end so it doesn’t overcook.
  3. Storage: Store leftovers in an airtight container in the fridge for up to 3 days. You can also cover the baking dish tightly with foil.
  4. Reheating: I typically just heat any leftovers up in the microwave for a minute or so until the potstickers are warmed through.

How to Serve

  • Salad: This cozy dish pairs perfectly with a crisp cucumber salad like this Asian cucumber salad.
  • Meal prep: Divide the dish into several meal prep containers with rice or noodles, and a cucumber salad on the side!

Ingredients

  • 1 11 oz. bottle of Trader Joe's Thai Style Red Curry Sauce can substitute 2-3 tbsp. red curry paste (such as this one from Taste of Thai)
  • 1 13.5 oz. can of unsweetened coconut milk
  • 1/4 cup Trader Joe's Soyaki can substitute teriyaki sauce
  • 2 tbsp. brown sugar
  • 1 tbsp. soy sauce
  • 1 tbsp. garlic, minced about 4 cloves of garlic
  • 20 frozen potstickers I used Trader Joe's Chicken Gyoza
  • 4-5 cups of broccoli, cut into small florets swap with baby spinach, baby bok choy, snap peas, zucchini, or carrots…OR leave out the veggies altogether.
  • Optional garnishes: green onions, cilantro, Trader Joe's Crunchy Chili Onion

Instructions

  • Prep: Preheat oven to 400°F. In a bowl, whisk together curry sauce (or paste), coconut milk, Soyaki sauce (or teriyaki) garlic, soy sauce, and brown sugar. Pour mixture into a 9×13 baking dish (or similar).
  • Add: Layer the potstickers over the curry mixture.
  • Bake: Cover with foil and bake for 20-25 minutes.
  • Add broccoli: Remove foil from the pan and add the broccoli florets. Nestle them between the potstickers so they are partially submerged in the sauce. Cover and bake for another 15-20 minutes until the sauce is bubbly and the broccoli is crisp-tender (or cooked to your preference).
Optional: Remove the foil during the last 10 minutes of cooking if you'd like the potstickers slightly crisp on top. You can also take off the foil and broil it for about 2-3 minutes.
Also note that many other recipes call for less baking time. It will vary slightly depending on your oven, but if you bake the potstickers straight from the freezer, it will take at least 40 minutes for the sauce to get bubbly and the potstickers to cook all the way through.
  • Cool and serve: Allow a few minutes for the dish to cool. Serve over rice and garnish with scallions, cilantro, or Crunchy Chili Onion, if you like.

Great and easy. Slight changes- added cooked chunks of chicken thighs, pea pods and chopped red pepper the ast 20 min instead of broccoli. First 20 min I added spinach with the pot stickers and sauce. Was plenty for three with rice for dinner with leftovers the next day. Will definitely make again with variations!
