This Trader Joe's red curry chicken is fast, fresh and so flavorful! The TJ's Thai-Style Red Curry Sauce is added in with chicken, veggies, and fresh basil and comes together in about 20 minutes to make this an easy weeknight dinner or quick Trader Joe's lunch idea!
1lb.chicken breast, cut into small bite-sized pieces
1-2bell peppers, slicedfeel free to include more fresh veggies such as snap peas, green beans, or carrots.
111 oz.bottle of Trader Joe's Thai Style Red Curry Sauce
1tbspbrown sugar
1cupfresh basil leaves, torn or roughly chopped
rice, for serving
Instructions
Cook chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook 3-4 until barely cooked through. Add bell pepper and cook 2 minutes more stirring often.
Add and simmer: Add red curry sauce and brown sugar. Stir to combine. Reduce heat to low and simmer for 3-4 until red pepper is crisp-tender and chicken is cooked through.
Finish: Turn off the heat and stir in basil. Allow basil to wilt for a minute and serve over rice.
