Easy Trader Joe's Red Curry Chicken

This Trader Joe's red curry chicken is fast, fresh and so flavorful! The TJ's Thai-Style Red Curry Sauce is added in with chicken, veggies, and fresh basil and comes together in about 20 minutes to make this an easy weeknight dinner or quick Trader Joe's lunch idea!

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb. chicken breast, cut into small bite-sized pieces
  • 1-2 bell peppers, sliced feel free to include more fresh veggies such as snap peas, green beans, or carrots.
  • 1 11 oz. bottle of Trader Joe's Thai Style Red Curry Sauce
  • 1 tbsp brown sugar
  • 1 cup fresh basil leaves, torn or roughly chopped
  • rice, for serving

Instructions
 

  • Cook chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook 3-4 until barely cooked through. Add bell pepper and cook 2 minutes more stirring often.
  • Add and simmer: Add red curry sauce and brown sugar. Stir to combine. Reduce heat to low and simmer for 3-4 until red pepper is crisp-tender and chicken is cooked through.
  • Finish: Turn off the heat and stir in basil. Allow basil to wilt for a minute and serve over rice.
