This creamy Southwest Chicken Pasta is what happens when two incredible cuisines collide: Italian and Tex-Mex! You get this amazing, flavorful, comforting bowl of goodness…and it’s ready in about 30 minutes!

A match made in heaven…

Nothing says comfort food to me more than a big bowl of creamy pasta! I created this dish to mash up my favorite comfort food (creamy pasta!) with my favorite cuisine (Tex-Mex!) – and this Creamy Southwest Chicken Pasta was born.

This recipe is made for busy weeknights (Thursdays is pasta night at our house) and when you just need a hearty meal. Don’t forget to pile on the toppings, too…cilantro, sour cream, guacamole, salsa…and have yourself a little Italian Tex-Mex party! Ole!

HOW TO MAKE SOUTHWEST CHICKEN PASTA: STEP-BY-STEP

Here are some quick visual instructions. Remember that full instructions with exact ingredients will be in the printable recipe card below!

Steps 1 & 2: Cook up your pasta. Season chicken with taco seasoning, then cook for 3-4 minutes.

Step 3 & 4: Add cream, Rotel, beans, corn and cheese. Stir well and simmer the sauce for about 5 minutes.

Step 5 &6: Stir in pasta and cooked chicken and top with toppings!

Casey’s Top Tip: When adding the chicken back into the pan, make sure you add all of the juices that are on the plate, too! This gives the dish so much extra flavor!

EASY ADDITIONS

  • Spice: Add red chili flakes or chili powder to kick up the heat a little in this dish! Chopped jalapenos are also delicious—cook them right in with the onions and garlic.
  • Veggies: Add 1-2 chopped bell peppers to this dish for extra veggies.

Creamy Southwest Chicken Pasta

Ingredients
  

  • 16 oz. penne pasta or your favorite pasta shape!
  • 2 tbsp olive oil, divided
  • 1 lb. chicken breast or thighs, cut into small, bite-sized pieces
  • 2 tbsp taco seasoning store-bought or make your own!
  • 1 cup onion, diced one medium onion
  • 1 tbsp garlic, minced (about 4-5 cloves) the best garlic chopper!
  • 15 oz. can black beans, drained and rinsed
  • 10 oz can tomatoes with green chilies such as Rotel
  • 15 oz can of corn, drained can also use 1 1/2 cups frozen corn
  • 1 cup heavy cream can sub half and half
  • 1 cup sharp cheddar cheese, grated
  • Optional toppings: cilantro, sour cream, salsa, lime juice, extra cheese, avocado.

Instructions
 

  • Prep: Cook pasta according to package directions. Drain and set aside.
    Coat your chicken pieces with taco seasoning.
  • Cook Chicken: While the pasta is cooking, add 1 tbsp of olive oil to a large skillet over medium-high heat. When the oil is hot, add chicken and cook for 3-4 minutes until the chicken is cooked through (internal temp: 165°F). Transfer chicken to a plate and cover with foil.
  • Cook Onions and Garlic: To the same skillet over medium heat, add the remaining 1 tbsp of olive oil. When the oil is hot add onions and cook for about 2 minutes until soft. Add garlic and cook 1 minute more, stirring often.
  • Finish the Sauce: Add tomatoes, black beans, corn, heavy cream, and cheddar cheese. Cook for 4-5 minutes, stirring often.
  • Finish: Stir in the pasta, chicken, and all of the juices from the plate! Stir, stir, stir until pasta is well-coated with the sauce. Garnish with all the toppings you like, or enjoy as-is!
