The Trader Joe’s Elote seasoning and Elote corn chips take it over the top, but I give you some easy substitutions if you don’t have a Trader Joe’s nearby. So there’s no excuse not to whip up this delicious dish tonight!

INGREDIENT NOTES & SUBSTITUTIONS

Ground Beef: Feel free to substitute any ground meat–chicken, turkey, even pork.

Enchilada Sauce: As of Fall 2024, Trader Joe’s said they are discontinuing their enchilada sauce (I am SO BUMMED!). But no worries, just substitute any other enchilada sauce in it’s place.

Elote Corn Chips: These chips really make this dish amazing, but you can also use regular corn chips, or tortilla chips as well.

Elote Seasoning: If you can’t find it, you can substitute taco seasoning.

Casey’s Top Tip: The best way to soften your cream cheese is to just let it sit out while you are prepping the rest of the dish. If it’s not soft enough by then, microwave it on 50% power in 15-20 second increments until it’s soft.

Ingredients
  

  • 1 lb. lean ground beef can substitute ground turkey or chicken
  • 3 tbsp Trader Joe's Everything But The Elote Seasoning can substitute taco seasoning
  • 1 small onion, diced about one cup
  • 1 24 oz jar Trader Joe's enchilada sauce As of Fall 2024, Trader Joe's discontinued their original enchilada sauce. Feel free to use your favorite brand or use the new version!
  • 1 15 oz. can of corn, drained
  • 1 15 oz. can of black beans, drained and rinsed optional
  • 4 oz. cream cheese, softened about half of a block
  • 2 cups cheddar cheese, grated
  • 10-12 small corn tortillas cut into small triangles
  • 2 cups Trader Joe's Elote Corn Dippers can substitute regular corn chips
  • green onions, sour cream, and olives for serving optional

Instructions
 

  • Brown Meat: Heat a large skillet over medium-high heat. Add the ground beef and cook for 3-4 until brown, breaking the meat up as it cooks. Tip: Use a potato masher in the last 2-3 minutes of cooking if you want to get the meat broken up into nice, small pieces.
  • Season: Season the beef with Elote seasoning. Add onion and cook for 3-4 minutes until the onions start to soften. Then add enchilada sauce, corn, and black beans (if using). Stir until well-combined. Bring to a boil, then reduce heat to low and simmer for 1-2 minutes.
  • Add: Stir in softened cream cheese and 1 ½ cups shredded cheese. Stir, stir, stir until the cheeses are fully melted–about 2 minutes.
  • Add tortillas:  Stir in tortilla pieces, a few at a time, making sure they are all coated with the sauce. Cook 2-3 minutes until heated through.
  • Finish: Sprinkle the remaining cheese and crushed Elote corn chips over the top. Garnish with scallions and sour cream, if using!
