This Trader Joe's Elote Enchilada Skillet will be an absolute hit! All the savory flavors of enchiladas come together in one pan--without the mess of rolling enchiladas! The Trader Joe's Elote seasoning and Elote corn chips take it over the top, but I give you some easy substitutions if you don't have a Trader Joe's nearby. So there's no excuse not to whip up this delicious dish tonight!

1small onion, dicedabout one cup
124 ozjar Trader Joe's enchilada sauceAs of Fall 2024, Trader Joe's discontinued their original enchilada sauce. Feel free to use your favorite brand or use the new version!
115 oz. can of corn, drained
115 oz. can of black beans, drained and rinsedoptional
4 oz. cream cheese, softenedabout half of a block
2cupscheddar cheese, grated
10-12 small corn tortillascut into small triangles
green onions, sour cream, and olives for servingoptional
Instructions
Brown Meat: Heat a large skillet over medium-high heat. Add the ground beef and cook for 3-4 until brown, breaking the meat up as it cooks. Tip: Use a potato masher in the last 2-3 minutes of cooking if you want to get the meat broken up into nice, small pieces.
Season: Season the beef with Elote seasoning. Add onion and cook for 3-4 minutes until the onions start to soften. Then add enchilada sauce, corn, and black beans (if using). Stir until well-combined. Bring to a boil, then reduce heat to low and simmer for 1-2 minutes.
Add: Stir in softened cream cheese and 1 ½ cups shredded cheese. Stir, stir, stir until the cheeses are fully melted–about 2 minutes.
Add tortillas: Stir in tortilla pieces, a few at a time, making sure they are all coated with the sauce. Cook 2-3 minutes until heated through.
Finish: Sprinkle the remaining cheese and crushed Elote corn chips over the top. Garnish with scallions and sour cream, if using!
