This egg roll bowl recipe has come to be one of my absolute favorite high-protein lunch meal preps – I double the recipe for super quick, satisfying lunches all week. If you like a little spice, a nice big spoonful of TJ’s Crunchy Chili Onion takes it over the top!

INGREDIENT NOTES & SUBSTITUTIONS

Ground Turkey: Any ground meat works wonderfully in this recipe, so use your favorite!

Crunchy Chili Onion: This is a must-have condiment if you want to add a little spice to this dish! I just spoon it over the top, but it’s totally optional!

Casey’s Top Tip: Not gonna lie, I LOATHE chopping garlic and ginger… BUT I don’t like the taste of the bottled/jarred stuff. Trader Joe’s frozen garlic and ginger squares are a LIFESAVER. I won’t say they are completely equal to fresh, but they are way better than the jarred versions and save a good amount of time!

Trader Joe’s Egg Roll Bowl

Ingredients
  

  • 1 lb. lean ground turkey
  • 1 9 oz. package of cole slaw mix (dressing discarded) or shredded cabbage
  • 1 tbsp garlic, minced 4 Trader Joe's frozen garlic squares work great!
  • 2 tsp ginger, minced 2 Trader Joe's frozen ginger squares work great!
  • 1/2 cup Trader Joe's Soyaki sauce
  • Rice, for serving I love Trader Joe's frozen jasmine rice packets!
  • green onions and Crunchy Chili Onion optional, for serving

Instructions
 

  • Brown Meat: In a large skillet over medium-high heat, cook turkey for 3-4 minutes until cooked through and no longer pink. Pro Tip: Use a potato masher during the last minute of cooking to get the meat broken up nice and fine.
  • Add: Add ginger and garlic and cook one minute more. Then, add the bag of slaw/cabbage and stir until everything is well combined. Cook 1-2 minutes until the cabbage is slightly soft.
  • Finish: Stir in Soyaki sauce and cook until heated through. Serve over rice and top with sliced green onions, and Crunchy Chili Onion, if you like!
