INGREDIENT NOTES & SUBSTITUTIONS

Salmon: Try to find a nice, thick piece (or pieces) of salmon. It’s hard to make good cubes when the cut is too thin.

Hot Honey: The hot honey is great for heat, but regular honey works just fine, too.

Veggies: I used Trader Joe’s frozen edamame and shredded carrots for this recipe, but add or substitute any fresh, crunchy veggies you like. Red bell pepper and cucumber are both great.

Casey’s Top Tip: Salmon cooks up very quickly! You are looking for an internal temperature of about 145° (use an instant-read thermometer!) or if you pierce the salmon with a fork, it flakes easily, but should still be juicy and buttery.

Ingredients
  

For the salmon

  • 1-1 1/2 lbs. boneless, skinless salmon, preferably nice thick piece(s), cut into 1 inch cubes
  • 2-3 tsp olive oil
  • 1 tsp cornstarch
  • 1 tbsp Trader Joe's Salmon Rub See Note 1

For the sauce

  • 2 tbsp Trader Joe's Hot Honey regular honey is fine, too!
  • 3 tbsp soy sauce
  • 1 tbsp Trader Joe's Crunchy Chili Onion

For the bowls

  • 2-3 cups cooked rice 2-3 packages of Trader Joe's microwave Jasmine rice
  • 1/2 cup shelled edamame See Note 2
  • 1 cup carrots, shredded See Note 2
  • 1-2 avocados, diced

For the sriracha mayo (OPTIONAL)

  • 1/2 cup mayonnaise
  • 1 tbsp sriracha sauce
  • 1 tsp sugar
  • 1 tsp soy sauce
  • pinch of salt

Instructions
 

  • Prep Salmon: In a medium bowl, coat salmon cubes with oil then add salmon rub (or your homemade seasoning blend) and cornstarch. Use a spoon or clean hands and toss until all spices/cornstarch are absorbed.
  • Cook Salmon: Air fry the salmon at 400° for 6-8 minutes. You can also bake the salmon on a baking sheet at 400° for 8-10 minutes. Note: Air fry and bake times will vary slightly. You are looking for an internal temperature of about 145° or if you pierce the salmon with a fork it flakes easily, but should still be juicy and buttery! 
  • Make the Sauce: While the salmon is cooking, make the sauce. In a small saucepan over medium heat, combine hot honey, soy sauce, and crunchy chili onion. Bring to a boil, and cook for about 2 minutes. Optional: Whisk together all ingredients for the sriracha mayo, if making.
  • Finish: Assemble your bowls: Divide rice, edamame, carrots, avocado, and cooked salmon into individual bowls. Drizzle generously with the sauce. (drizzle on the sriracha mayo, too, if using!) Top with more crunchy chili onion and serve.

Notes

Note 1: If you can’t find the Trader Joe’s Salmon Rub, no worries. Make your own blend by combining: 1 tsp sea salt, 1 tsp garlic powder, 1 tsp smoked paprika, and 1 tsp brown sugar.
Note 2: Feel free to substitute any fresh, crunchy veggies such as cucumber or red bell pepper!

  1. I’m lowkey losing my mind, what is the cornstarch for???? It’s mentioned as an ingredient for the salmon but not mentioned in the instructions

    1. You are NOT losing your mind! I updated the recipe — so sorry! You toss the spices and cornstarch with the salmon cubes. The cornstarch keeps it juicy and adds a bit of crispiness 🙂 I appreciate you letting us know! xo
