INGREDIENT NOTES & SUBSTITUTIONS

Unexpected Cheddar Cheese Spread: This spread can be found year-round near the cheese and dips.

Panko bread crumbs: I love using panko for the light, but super crispy texture. Trader Joe’s typically always stocks panko. You can use regular, unseasoned breadcrumbs if you can’t find panko.

Serve with: This mac and cheese is so versatile! Pair it with baked chicken, pork chops, or flank steak, and a nice green salad. It also makes a super easy holiday side dish, too.

Ingredients
  

For the macaroni

  • 1 16 oz. package of dry macaroni
  • 2 9 oz. containers of Trader Joe's Unexpected Cheddar Cheese Spread

For the breadcrumb topping

  • 1 tbsp salted butter
  • 1 cup panko breadcrumbs
  • 1/4 tsp sea salt or kosher salt
  • 1/4 tsp garlic powder

Instructions
 

  • Prep: Cook the pasta according to package directions. Drain the pasta and return it to the hot pot; set aside.
  • Make the topping: While the pasta is cooking, make the breadcrumb topping. In a small skillet, melt the butter over medium-low heat. Add panko, salt, and garlic powder. Spread in an even layer, and toast the bread crumbs for about 3-4 minutes stirring occasionally until breadcrumbs are nicely golden brown and desired crispness. Set aside.
  • Add cheese:  Place the pasta pot with the pasta over low heat. Add both containers of Unexpected Cheddar Cheese Spread.  Stir, stir, stir until the cheese fully coats the pasta and the pasta is warmed through (about 2 minutes).
  • Finish: You can either transfer the mac and cheese to individual bowls and sprinkle (generously) with the breadcrumb mixture OR transfer to an 8×8 serving dish and sprinkle on the breadcrumbs. Serve right away!
