Trader Joe's Easy Green Chicken Chili

This Trader Joe's green chicken chili is packed with flavor and so easy to make! Full of fresh flavors and spices, it's a treat on chilly days. If you don't have a Trader Joe's nearby, no problem! This dish can also be made with ingredients from the regular grocery store!

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb. ground chicken
  • 1 1/2 tsp cumin
  • 1 1/2 tsp chili powder
  • 2 tsp garlic powder
  • 2 tsp sea salt or kosher salt
  • 1/2 tsp black pepper
  • 1 cup yellow onion, diced
  • 1 jalapeno, seeded and chopped
  • 1 4 oz. can Trader Joe's fire-roasted diced green chilis any brand will work
  • 1 12 oz. jar of Trader Joe's salsa verde you can substitute any brand of green salsa
  • 2 cups chicken stock
  • 1 15 oz. can cannellini beans, drained and rinsed or any white beans you like
  • 1 cup Trader Joe's frozen roasted corn can substitute any frozen or canned corn
  • juice of one lime
  • Optional garnishes: sour cream, cilantro, cotija cheese, avocado and Trader Joe's Elote chips, for serving

Instructions
 

  • Cook and Chicken & Veggies: Heat olive oil in a deep-sided skillet or medium stockpot. Add ground chicken cook for 2-3 minutes until no longer pink. Break the meat up with a wooden spoon as it cooks. Then, season the meat with salt, pepper, cumin, chili powder, garlic powder. Stir to combine.
    Add onions, jalapeno, and green chilis. Cook 3-4 min more until onion is slightly softened.
  • Add & Simmer: Stir in salsa, broth, beans, and corn. Bring to a boil, and simmer on medium for 10-15 minutes.
  • Finish: Squeeze in the lime juice then spoon into bowls and top with toppings.
