Upgraded Trader Joe's Mini Sheet Cake

If you've ever taken a bite of any of the Trader Joe's Mini Sheet Cakes, you know they do not disappoint. But did you know that these mini cakes can be easily "upgraded" into a full-blown "gourmet" dessert?? No baking required!

Ingredients
  

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 3 Trader Joe's Mini Sheet Cakes
  • fresh berries, fresh mint, edible flowers, sprinkles, etc. for decorating

Instructions
 

  • Make the whipped cream frosting: In a large mixing bowl, beat the hevay cream with an electric mixer until soft peaks begin to form. Add the powdered sugar and vanilla. Continue beating until stiff peaks form. Place in the fridge.
  • Stack cakes: Use a knife to even out the pre-made frosting layer on each cake. Spread the frosting to the edge of the cake. Then place one cake on a serving plate and stack the other two on top.
  • Frost the cake: With a spatula or knife, carefully spread the whipped cream frosting evenly over the entire cake.
  • Decorate: Use berries and mint to decorate the top of the cake and the serving tray.
