This Easy Chicken Fajita Pizza recipe will become your new favorite pizza! It takes the best of chicken fajitas and pizza and marries them together to make the most satisfying, delicious, and quick meal. This tasty pizza is perfect for a busy weeknight or a weekend party!
1lb.chicken breasts, cut into small bite-sized pieces
1tbspolive oil
1/4cuplime juice
1tbspgarlic, mincedthe best garlic chopper!
1tspsmoked paprika (sweet paprika is fine, too)
1tsponion powder
1tspgarlic powder
1tspchili powder
1tspsugar
1tspcumin
For the pizza & veggies
29 inchpre-made pizza crusts OR pizza dough formed into (2) 9 inch roundsone large pizza crust is also fine, use your favorite!
1/2-1cupsalsa
2cupsshredded cheeseI used a mixture of Colby Jack and mozzarella--use you your fave!
1/2cup sliced red or yellow onion
1cupcubed bell peppers
1tbspolive oil
1tbspfajita or taco seasoning (optional)homemade or store-bought
Instructions
Prep: Preheat oven to 425°F.
Chicken Marinade: In a large bowl, whisk all ingredients for the chicken marinade (1 tbsp olive oil through cumin above). Add chicken and toss to coat. Let the chicken marinate while you prep the veggies.
Prep Veggies: Place sliced onions and bell peppers in a bowl, drizzle with 1 tbsp olive oil, and season with taco or fajita seasoning (if using). You can also just season the veggies with salt and pepper.
Cook Chicken: Heat a large skillet over medium high heat, add the remaining 1 tbsp of olive oil. When the oil is hot, add the chicken and cook for 5-6 minutes until cooked through.
Assemble Pizza: Spread salsa evenly over your pizza dough or crust. Add cheese, then peppers/onions, and cooked chicken.
Bake: Place pizza in your preheated oven and bake until cheese is melted and bubbly. The cooking time will depend on what type of pizza crust you use. Follow the package instructions if you are using a store-bought crust or dough (See Note 2).

Note 1: For extra yummy flavor, omit thee dry spices and marinate the chicken in this fajita marinade!Note 2: If you're a hard-core pizza lover, chances are you probably have a pizza stone in your kitchen. But in a pinch, you can use a baking sheet, a regular pizza pan, or even a cast iron skillet for heat retention.
