Trader Joe's Sausage and Spinach Gnocchi

This Trader Joe's sausage and spinach gnocchi is the kind of easy weeknight dinner you’ll want to make on repeat. It comes together in one pan with simple Trader Joe’s ingredients and delivers cozy, comforting flavor without a lot of effort. Perfect for busy nights when you want something homemade but still keeping it quick and easy.

Ingredients
  

  • 1 lb. sweet or hot Italian sausage, removed from casings
  • 1 small onion, chopped (about 1 cup)
  • 4 cloves garlic, minced (about 1 tbsp.) the best garlic chopper
  • 1 14.5 oz. container of Trader Joe's refrigerated Bruschetta Sauce can sub (1) 14.5 oz. can of diced tomatoes
  • 1/4 cup chicken broth + a little more, if needed
  • 1 tsp. sugar
  • 1 1/2 tbsp. Trader Joe's Aglio Olio Seasoning can sub. Italian seasoning
  • 1 16 oz. package shelf-stable gnocchi
  • 3-4 cups baby spinach, roughly chopped a few big handfuls
  • 1/2 cup freshly grated Parmesan cheese + more for serving

Instructions
 

  • Cook sausage: In a large pan over medium-high heat, add sausage. Cook for 3-4 minutes, breaking the sausage up into small pieces.
  • Add onion and garlic: Add onion and cook for 2-3 minutes. Then, add garlic and cook 2 minutes more.
  • Add: Add bruschetta sauce, chicken broth, sugar, gnocchi, and Aglio Olio seasoning. Cook for 7-8 minutes, stirring often, until the gnocchi is fluffy and cooked through. If the pasta  seems like it’s a bit dry, add a few splashes more of chicken broth.
  • Add spinach: Add spinach and stir until wilted.
  • Finish: Stir in Parmesan cheese. Add more Aglio and Parmesan cheese over the top and serve.

Notes

  1. Chop the spinach: I like giving my spinach a rough chop so it evenly distributes throughout the dish. But if you are crunched for time, you can just throw in a few handfuls of baby spinach as-is.
  2. Extra broth: If the dish is starting to look dry before the gnocchi is cooked, splash in a little extra chicken broth to loosen everything up.
  3. Make it creamy: A splash of cream or half and half can make the sauce a little richer and oh, so delish!
