Casey Rooney
If you need a super quick, easy meal (15 minutes!) that everyone will love, look no further! These Trader Joe's pulled chicken sandwiches use super shortcuts like Trader Joe's fully cooked hardwood smoked chicken and cole slaw mix so this meal comes together without you even getting your hands dirty!

Ingredients

  • 1 16 oz. container ofr Trader Joe's Hardwood Smoked Pulled Chicken
  • 1/4 cup water
  • 3/4 to 1 cup BBQ sauce Trader Joe's sauce or use your favorite!
  • 2 tbsp apple cider vinegar
  • 1 package Trader Joe's cole slaw mix I prefer the organic blend
  • 4 brioche buns TJ's "Aloha" rolls or Hawaiian rolls also work well
  • pickle slices
  • Trader Joe's hot honey can substitute regular honey for less heat

Instructions

  • Cook chicken: In a skillet over medium-high heat, empty the contents of the pulled chicken package. Heat for 4-5 minutes, stirring to break up the chicken.  Add ¼ cup water as it cooks.
  • Add sauce: Add BBQ sauce and apple cider vinegar and cook about 2 minutes more until the sauce coats the chicken and everything is heated through.
  • Prep the slaw and buns: While the chicken is cooking, toss the slaw with the dressing and toast the brioche buns.
  • Finish: Pile chicken onto toasted buns and drizzle with hot honey. Then, top with pickles and slaw!

Notes

  1. Don't skip the vinegar: This might sound like a strange ingredient but it reallyyyyy takes this pre-cooked chicken up a notch and makes it taste "homemade!"
  2. Slaw topping: If you don't like the Trader Joe's slaw and dressing, make your own! Here is my favorite easy slaw recipe.
  3. Storage: Store leftover chicken in an airtight container in the refrigerator for 2-3 days. You can reheat leftovers in the microwave before putting it on your bun.
