Hard Boiled Egg Chocolate Pudding

This hard boiled egg chocolate pudding is about to blow your mind! Creamy, delicious and high in protein, no one will ever guess the main ingredient is boiled eggs! Trust me on this one, just try it -- it's so easy!

Ingredients
  

  • 4 hardboiled eggs chilled or at room temperature
  • 3 tbsp. unsweetened cocoa powder I use dark cacao from Trader Joe’s
  • 1/4 cup honey or maple syrup
  • 1/2 cup milk I use 2% but use whatever you like! Add a little more or less depending on your desired consistency.
  • 2 tsp. vanilla extract
  • pinch of sea salt

Instructions
 

  • Blend: Add all ingredients to a blender or food processor. Blend until smooth (about 30 seconds or so). Yes, it will smell like eggs! Stay with me here!
  • Chill: Pour pudding into a container or individual jars and chill for 1-2 hours or even overnight. The egg smell will be gone in about 1-2 hours but I love the texture when it’s been chilled overnight.  Add a dollop of whipped cream if you like!

Notes

  • Serving note: This recipe makes 2 larger 3/4 cup servings or 4 smaller servings. 
  • Good eggs: Make sure to not use overcooked boiled eggs and don’t use eggs that are overly soft. If it has a dark greenish ring around the yolk, that means it’s overcooked. If the yolk is sticky/goopy, it’s undercooked. This ensures an eggy taste won’t remain when your pudding is done.
  • Cheat tip: Buy precooked hardboiled eggs to make this pudding and save yourself some time!
  • Fancy: Make it a little fancy and top the pudding with whipped cream and chocolate shavings!
  • Storage: This pudding keeps well in the fridge in an airtight container for up to 4 days. Do not freeze.
