1-2tspvanilla extract
110 oz.bag mini marshmallows
1/4 tspsea salt or kosher salt
1cupsemi-sweet chocolate chips
colored sprinkles, optional
Instructions
Prep: Spray or butter a 9x13 inch baking dish.Pour Rice Krispie cereal into a large bowl and set aside.
Melt: In a medium saucepan over medium-low heat, add butter, vanilla extract, marshmallows, and salt. Stir gently until the mixture is melted. The marshmallow mixture should be nice and glossy.
Pour & Mix: Pour the marshmallow mixture into the bowl with the Rice Kirspie cereal. Mix gently until the cereal is well-coated with the marshmallow. mixture. Tip: Sometimes using two serving spoons and "tossing" like a salad is easiest. I like to use my Danish dough whisk.
Transfer: Transfer Rice Krispie mixture into your prepared 9x13 pan and spread evenly. Tip: Butter or spray a fork with cooking spray and use the fork to gently press the mixture evenly into the pan.
Allow to Rest: Allow the Rice Krispie treats to set for 1-2 hours. You can pop them into the fridge to speed up the resting time.
Cut: Cut the treats into pieces--size is totally up to you! I personally like smaller, bite-sized treats.
Melt: In a microwaveable bowl, add chocolate chips and the remaining 2 tbsp of butter. Heat chocolate in the microwave at 50% power in 20-second intervals until melted. Stir chocolate between each 20-second interval.
Dip: Dip each of the cut Rice Krispie treats into the melted chocolate. Place them on a piece of parchment paper or on a plate. Sprinkle with desired toppings. I love colored sprinkles but you can also use nuts, or chopped dried fruit...or you can leave them as-is!Allow the treats to cool off for a few minutes and allow the chocolate to set. Enjoy!
