This Trader Joe's Bruschetta Chicken only uses 5 main ingredients, but is bursting with flavor! It's a light and healthy meal when served with a green salad. Or, serve it over pasta or rice. Either way, you'll love how this dish will be on your table in about 15 minutes!
Prep: Pound chicken breasts to even thickness, if needed. Season chicken with aglio olio seasoning.
Cook Chicken: In a large skillet (preferably with a lid-See Note 1) heat olive oil over medium heat. Add chicken and cook for 4-6 minutes on each side until cooked through.
Add Bruschetta: Add large spoonfuls of the bruschetta sauce to the top of each chicken breast. Then, add a sprinkle of cheese to each chicken breast. Cover the pan for a minute or so until the cheese melts.
Finish: Uncover the pan and transfer the chicken to plates or a serving dish. Drizzle the chicken generously with balsamic glaze, and sprinkle with fresh basil. Enjoy!

Note 1: If you don't have a large skillet with a lid, you can just use a baking sheet to cover the skilet :)Serving: This dish is great served over pasta or even rice or orzo. Keep it low-carb and skip the pasta/rice and just pair it with a fresh green salad. Storage: Store any leftovers in an airtight container. The chicken, topped with the bruschetta will stay yummy for 2-3 days.
