Trader Joe's Caramelized Onion Dip Chicken

You are in for a treat! This Trader Joe's caramelized onion dip chicken is a full meal in one pan that takes about five minutes to prep! Chicken breasts are coated with the creamy Trader Joe's caramelized onion dip, then topped with cheese, and crunchy onions...add in green beans and you totally get a "green bean casserole" vibe! It's so good!

Ingredients
  

  • 3-4 boneless, skinless chicken breasts, sliced thinly See Tips below
  • 1 tsp. sea salt or kosher salt
  • 1 tsp. garlic powder
  • 1/2 tsp. freshly ground black pepper
  • 1 10 oz. container of Trader Joe's caramelized onion dip
  • 1 cup mozzarella cheese, shredded
  • 1-2 cups fresh green beans cut into small 1-2 inch pieces
  • 3-4 slices Provolone cheese, torn into pieces
  • 1 cup French-fried onions

Instructions
 

  • Prep: Preheat oven to 375°F. Place chicken in a 9x13 casserole dish or on a baking sheet. Season chicken on both sides with salt, pepper, and garlic powder.
  • Add dip: Spread 1-2 heaping tablespoons of the onion dip generously over the top of the chicken breasts (there might be some leftover).
  • Add: Top the chicken with shredded mozzarella cheese, then scatter the green beans over and around the chicken (See note below).
  • More cheese and bake: Add the provolone cheese pieces over the top and bake for 30-40 minutes (depending on thickness) until the internal temperature reaches 165°F.
  • Broil: Add the French fried onions and broil for 2 minutes more to get the cheese and onions nice and golden brown.

Notes

  1. Thin chicken: Slicing your chicken breasts thinly allows for quicker cooking, which we all need on a busy weeknight! If you buy the giant chicken breasts at Costco, just slice them in half lengthwise. Trader Joe's chicken breasts are usually fairly thin and even.
  2. Green beans: If you like your green beans "al dente" or if you are using frozen green beans, you can add them to the pan about halfway through cooking.
  3. Check the chicken: The cooking time will depend on the thickness of your chicken. For super thin chicken or chicken breast tenders, start checking around the 20 minute mark. We are looking for an internal temperature of 165°F using an instant-read themometer.
  4. Storage: Store leftovers in an airtight container in the refrigerator for 2-3 days. You can reheat leftovers in the microwave or in the oven for 10-15 minutes until heated through.
