Crockpot Mongolian Beef

This recipe is so simple and delish! It doesn't need to cook too long if you slice the meat thinly.

- 1 1/2 lbs flank steak, cut into thin strips
- 1 tsp ginger, grated
- 4 cloves garlic, minced
- 3/4 cup low sodium soy sauce
- 1/2 cup water
- 1/2 cup brown sugar
- 2 cups shredded carrots pre shredded in the bag works great!
- 1/2 cup scallions, chopped
- 1 tbsp cornstarch optional
Add steak to crockpot.
Whisk together ginger, garlic, soy sauce, water, brown sugar and cornstarch (if using); pour sauce over meat.
Cook on HIGH for 3-4 hours or LOW 5-6 hours until meat is tender and sauce has thickened (if using corn starch).
A few minutes before you are ready to serve, stir in carrots.
Garnish with scallions and serve over rice or noodles.
I like stirring in the carrots at the very end so they don't get soggy.
Cooking time is about 3 hours on high and 5 hours on low. You don't want to overcook this one because the meat will. be dry.
