Chocolate Chip Mug Cake {using Trader Joe's Joe-Joe's Cookies}

Craving something sweet and want it FAST?! This chocolate chip mug cake is made with crushed Joe-Joe's cookies (or Oreo's) and is warm, gooey, and ready in minutes!This recipe has been tested nearly 20 times so it comes out perfect every time (my family never complained)!!

Ingredients
  

  • 4 Trader Joe's Joe-Joe's cookies + 1 more for topping Oreos or another brand sandwich cookie also works!
  • 2 tbsp. milk
  • 1/4 tsp. baking powder
  • 1 tbsp. all-purpose flour
  • 2 tbsp. semi-sweet chocolate chips
  • 1 tbsp. powdered sugar you can use regular sugar, too but just note that it doesn't dissolve quite as well
  • 1/2 tsp. vanilla extract
  • pinch of sea salt (about 1/8 tsp.)
  • Vanilla ice cream or whipped cream for topping

Instructions
 

  • Prep: Place 4 Joe's Joe's + all other ingredients  (aside from the whipped cream/ice cream!) into a large (at least 8 oz.) mug.
  • Mash: With a fork, mash the ingredients until the mixture is smooth, dark brown, and glossy.
  • Cook: Microwave for one minute. Let the mug cool in the microwave for an additional minute. Note: Cook time will vary a bit depending on your microwave. Start with 1 minute–if the mixture seems too gooey for your liking, pop it back in for another 15 seconds and it will be more cake-like.
  • Finish: Remove the mug from the microwave. Crush the remaining Joe Joe cookies over the top of the cake and top with lots of vanilla ice cream or whipped cream!

Notes

Casey's tips

  1. Use the right mug: Use a microwave-safe mug that's at least 8 to 12 ounces so the cake doesn't spill over the tip. I prefer a wide-mouthed coffee cup such as these.
  2. Adjust time: All microwaves cook a bit differently. Start by microwaving the cake for 1 minute. If the mixture seems too gooey for your liking, pop it back in for another 15 seconds and it will be more cake-like. I personally like this cake when it's nice and gooey, but adjust to your preference!
  3. Let it rest: Let this chocolate chip mug cake rest for 1-2 minutes before digging in! The cake will finish setting as it cools slightly.
  4. Double up: You can double the recipe for two people and make it in a larger mug (at least 12 ounces). Just adjust the cooking time up about 15-30 seconds.
