Easy Fajita Veggies Recipe

This Easy Fajita Veggies recipe with onions and peppers will instantly add some sizzle to your Taco Tuesday! It's easy, flavorful, and comes together quickly in one pan. These veggies are perfect for fajitas (of course!) tacos, burrito bowls, salads...and I even like to add them to my scrambled eggs!

Ingredients
  

  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 small red onion, thinly sliced
  • 3 large bell peppers, thinly sliced use a combo of colors!
  • 1-2 tbsp fajita seasoning or taco seasoning homemade or store-bought
  • salt/pepper to taste
  • juice of 1-2 limes (optional)

Instructions
 

  • Cook garlic: in a large skillet over medium heat, add 2 tablespoons of olive oil. When the oil is warm, add minced garlic and stir for about 30 seconds until you can smell the garlic.
  • Add Onions: Turn the heat to medium-high and add the onions. Cook about 2-3 minutes until they start to soften a bit, stirring often.
  • Add Peppers: Add the bell peppers, and cook for about 5-8 minutes. Stir often!
  • Finish: Add the fajita or taco seasoning and keep cooking until the veggies are tender to your liking (I personally like my veggies crisp-tender!). Serve these veggies with a protein or make veggie fajitas or fajita bowls!
