This Easy Fajita Veggies recipe with onions and peppers will instantly add some sizzle to your Taco Tuesday! It's easy, flavorful, and comes together quickly in one pan. These veggies are perfect for fajitas (of course!) tacos, burrito bowls, salads...and I even like to add them to my scrambled eggs!
3large bell peppers, thinly sliceduse a combo of colors!
1-2tbspfajita seasoning or taco seasoning homemade or store-bought
salt/pepper to taste
juice of 1-2 limes (optional)
Instructions
Cook garlic: in a large skillet over medium heat, add 2 tablespoons of olive oil. When the oil is warm, add minced garlic and stir for about 30 seconds until you can smell the garlic.
Add Onions: Turn the heat to medium-high and add the onions. Cook about 2-3 minutes until they start to soften a bit, stirring often.
Add Peppers: Add the bell peppers, and cook for about 5-8 minutes. Stir often!
Finish: Add the fajita or taco seasoning and keep cooking until the veggies are tender to your liking (I personally like my veggies crisp-tender!). Serve these veggies with a protein or make veggie fajitas or fajita bowls!
