Ingredients

  • 7 cups Riec Krispie cereal
  • 6 tbsp salted butter
  • 1 1/2 16 oz. bags mini marshmallows
  • 1/4 cup sprinkles (plus more for topping)
  • 1 tbsp olive oil
  • 1 cup white chocolate candy melts or vanilla flavored

Instructions

  • Prep: Spray a cooking sheet with cooking spray or coat with butter. Set aside. Add rice krispie cereal to a large bowl.
  • Melt: In a medium/large saucepan over medium heat, melt the butter. Add marshmallows and stir gently until marshmallows are melted and combined with the butter.
  • Pour & Mix: Pour the marshmallow mixture into the bowl with the Rice Krispie cereal. Mix gently, then add the sprinkles and mix until the Rice Krispies cereal is completely coated with marshmallow mixture and the sprinkles are spread evenly into the mixture.
  • Spread: Pour the Rice Krispies mixture into the cookie sheet. Spread it evenly using a fork or spoon coated with butter or cooking spray.
Allow the Rice Krispies treats to set, for at least 1-2 hours. It will be easier when you cut into them. Pop they in the fridge to speed up the process!
  • Melt: Once the Rice Krispies treats are set, melt the candy melts and olive oil in the the microwave using a microwave-safe bowl. Heat the candy melts in increments of 20 seconds at 50% power. Mix in between each interval until you have a nice glossy chocolate.
  • Cut & Dip: Use your favorite cookie cutter and cut out the Rice Krispies OR just use a knife and cut them into squares. Dip each of the Rice Krispie treats halfway into the melted white chocolate and place on a cookie sheet lined with waxed or parchment paper. Decorate the dipped Rice Krispie treats with sprinkles. Allow a half hour or so for the candy melts to set, then enjoy!
Note: The candy melts will set a lot faster than chocolate or baking chocolate!
