Crockpot Chicken Taco Skillet

Packed with protein, this recipe is so versatile and healthy! The leftovers are great for lunch and it freezes well, too.

- 1 lb ground chicken
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 packet low sodium taco seasoning
- 1 15 oz can black beans, drained and rinsed
- 1 15 oz can diced tomatoes with green chilis
- 1 cup shredded cheese cheddar, monterey jack or blend
- cilantro (optional)
Add first 6 ingredients to the crockpot and stir well to combine
Cook on low for 4-5 hours, 2-3 hours on high.
Top with shredded cheddar cheese and cilantro and serve!
You can pile the cheese on top of the meat right in the crockpot, cover and wait about 10 minutes for it to melt.

- It also works cold over romaine lettuce as a taco salad
