CROCKPOT CILANTRO LIME CHICKEN

This recipe can be prepped in minutes and cooks in the crockpot. You can use this chicken for so many different meals throughout the week!

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 16oz container fresh, store-bought salsa
  • 1 packet low sodium taco seasoning
  • 1 medium onion, chopped
  • 1 cup cilantro, roughly chopped
  • 2 limes, juice and zest
  • 1 cup frozen corn (optional)

Instructions
 

  • In a crockpot, stir together salsa, taco seasoning, onion and frozen corn (if using).
  • Add chicken breasts and stir to combine.
  • Cook on HIGH about 4 hours or on LOW 6-7 hours until chicken in tender and shreds easily.
  • When chicken is done, shred with two forks (you can do this right in the crockpot!)
  • Stir in lime juice and zest and cilantro.

Notes

My Favorite Ways to Serve Cilantro Lime Chicken
  • Soft Tacos: Wrap chicken in soft flour or whole wheat tortillas, top with toppings listed above. Add a side of black beans!
  • Burritos: During the last hour of cooking, add a can of black beans (drained) to the chicken. When heated through, spoon mixture into large tortillas, top with toppings, and serve as a delicious burrito!
  • Chicken & Rice: Spoon chicken and all of the delicious sauce over brown rice!
  • Quesadillas: Leftover shredded chicken makes an AWESOME quesadilla
