Easy Caesar Salad Without Anchovies

This Caesar Salad is made without anchovies and you won't believe how easy it is! Crisp romaine lettuce, croutons and fresh Parmesan cheese are all topped with a creamy homemade dressing that comes together in minutes. The easy homemade Caesar dressing recipe doesn't include raw eggs, anchovies....or the need for a food processor! Whip this salad up on busy weeknights as a side for pasta dishes or top it with grilled chicken and make it a complete meal!

Ingredients
  

For the salad

  • 3 romaine hearts, roughly chopped into 1/2" pieces
  • 1 cup croutons store bought or homemade
  • 1/2 cup Parmesan cheese, shredded or freshly grated Parmigiano Reggiano is best if you can find it! See Note 1
  • freshly cracked black pepper

For the dressing

  • 1/2 cup mayonnaise
  • 1/4 cup Parmesan cheese, finely grated
  • 2 tbsp fresh lemon juice
  • 2 tsp Dijon mustard
  • 1 tsp garlic powder
  • 2 tbsp milk
  • 1 tsp Worcestershire sauce See Note 2
  • 1/2 tsp sea salt

Instructions
 

  • Place all dressing ingredients in a small bowl and whisk together until smooth. For best results, whisk for at least 15-30 seconds to ensure ingredients are well combined. Taste dressing and season with a bit more salt, only if needed.
  • In a large salad bowl, add lettuce, Parmesan cheese and croutons. Toss with the dressing. Season with freshly cracked black pepper and a squeeze of fresh lemon juice, if you like! Serve right away.

Notes

Note 1: Use a vegetable peeler to shave off pretty strips from a block of Parmesan cheese. 
Note 2: Although this recipe does not include anchovies, Worcestershire sauce typically has some form of anchovies in it. If you have an allergy, you can substitute soy sauce for the Worcestershire sauce. It won't be the exact same, but the soy sauce will give the dressing that savory flavor.
