This Caesar Salad is made without anchovies and you won't believe how easy it is! The easy homemade Caesar dressing recipe doesn't include raw eggs, anchovies....or the need for a food processor! 1/2cupParmesan cheese, shredded or freshly gratedParmigiano Reggiano is best if you can find it! See Note 1

For the dressing
1/2cupmayonnaise
1/4cupParmesan cheese, finely grated
2tbspfresh lemon juice
2tspDijon mustard
1tspgarlic powder
2tbspmilk
1tspWorcestershire sauceSee Note 2

Instructions
Place all dressing ingredients in a small bowl and whisk together until smooth. For best results, whisk for at least 15-30 seconds to ensure ingredients are well combined. Taste dressing and season with a bit more salt, only if needed.
In a large salad bowl, add lettuce, Parmesan cheese and croutons. Toss with the dressing. Season with freshly cracked black pepper and a squeeze of fresh lemon juice, if you like! Serve right away.
Notes
Note 1: Use a vegetable peeler to shave off pretty strips from a block of Parmesan cheese. Note 2: Although this recipe does not include anchovies, Worcestershire sauce typically has some form of anchovies in it. If you have an allergy, you can substitute soy sauce for the Worcestershire sauce. It won't be the exact same, but the soy sauce will give the dressing that savory flavor.
