Green Beans with Pineapple and Bacon

These delicious Green Beans with Pineapple and Bacon are an unexpected twist on your typical holiday green beans! Fresh green beans are tossed in a sweet and savory bacon and pineapple glaze, then topped with almonds and more bacon for the perfect bite!

Ingredients
  

  • 1 lb. fresh green beans, trimmed OR Del Monte® canned green beans See Note 1
  • 1 can (20 oz.) Del Monte® Deluxe Gold® Pineapple Chunks , 1/2 cup of juice reserved
  • 8 oz bacon, chopped into 1/4" pieces (about 8 slices)
  • 1 tsp McCormick® Whole Rosemary Leaves
  • 2 tbsp light or dark brown sugar
  • 1/2 tsp salt
  • 1/4 cup sliced almonds (optional)

Instructions
 

  • In a skillet over medium heat, cook bacon bits until crispy--about 5-6 minutes. Transfer to a paper-towel lined plate; set aside.
  • Drain all but 1-2 teaspoons of bacon grease from the skillet. Add pineapple juice, brown sugar and rosemary, stirring well to mix. Bring to a boil over medium heat and cook 3-4 minutes until sauce is slightly thickened.
  • Add green beans, toss them in the sauce, then cover and cook for 5-6 minutes until beans are crisp-tender.
  • Add pineapple chunks, half of the bacon and salt to skillet with green beans. Give everything a big toss, then transfer to a serving platter. Top green beans with almonds (if using) and remaining bacon. Serve immediately.

Notes

Note 1: We think this recipe could also work with Del Monte® canned green beans, whole or cut, 3 or 4 cans.
