This Volcano Chicken Recipe combines super crispy chicken pieces tossed in a perfectly balanced sweet and savory sauce, with a little (or a lot!) of spice! This is a takeout quality dish right at home! You can easily customize the spice level on the sauce to make it super family-friendly!
1/2tspred pepper flakesadjust up or down, depending on your desired spice level. 1/2 tsp is medium-spicy.
For the chicken
1lb.chicken breast or chicken tenders, cut into small 1 inch pieces
2eggs, beaten
1/2cupcornstarch
1/4cupflour
1 1/2tspsea salt
1-2cupsoil, for fryingvegetable oil and peanut oil work best
green onions (spring onion) and sesame seeds for garnishoptional
Instructions
In a small bowl, whisk together ingredients for the volcano sauce; set aside.
Crack eggs into a medium sized bowl and beat about one minute until pale yellow and a bit frothy. Then, in a shallow dish or plate, combine corn starch, flour and salt and mix together.
Add half of the chicken pieces into the eggs and coat well. Then, dredge the egg-coated chicken into the cornstarch/flour mixture. Try to get off any excess egg before dredging it, if you can. Transfer chicken pieces to a plate or a wire rack. Repeat with other half of the chicken.
In a large skillet, add oil--use enough to coat the bottom of the pan by about 1/4 of an inch. You can also use a deep fryer if you have one!
Heat oil over medium-high heat. You can test to see if the oil is hot enough but sprinkling a tiny bit of flour into the oil. If the flour sizzles, the oil is hot!
Carefully add chicken pieces to the hot oil, making sure not to overcrowd the pan. You may need to do two batches depending on the size of your pan.
Fry chicken for 4-5 minutes on the first side, until golden brown. Carefully flip the chicken and cook another 2-3 minutes on the other side. I like to use a fish spatula for this. A fork or chop sticks also work!
When chicken is done, transfer to a paper towel lined plate.
In another large skillet over medium heat, add the volcano sauce. Cook for 2-3 minutes until sauce is bubbly and begins to thicken and reduce a bit. Add chicken to the reduced sauce and stir to get chicken evenly coated.
Sprinkle with green onions and sesame seeds, if you like and serve immediately over a bed of hot rice.
