Volcano Chicken Recipe

This Volcano Chicken Recipe combines super crispy chicken pieces tossed in a perfectly balanced sweet and savory sauce, with a little (or a lot!) of spice! This is a takeout quality dish right at home! You can easily customize the spice level on the sauce to make it super family-friendly!

Ingredients
  

Volcano Sauce Ingredients

  • 1/2 cup buffalo sauce I like Sweet Baby Ray's
  • 3/4 cup brown sugar
  • 2 tbsp soy sauce
  • 1/4 cup orange juice
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes adjust up or down, depending on your desired spice level. 1/2 tsp is medium-spicy.

For the chicken

  • 1 lb. chicken breast or chicken tenders, cut into small 1 inch pieces
  • 2 eggs, beaten
  • 1/2 cup cornstarch
  • 1/4 cup flour
  • 1 1/2 tsp sea salt
  • 1-2 cups oil, for frying vegetable oil and peanut oil work best
  • green onions (spring onion) and sesame seeds for garnish optional

Instructions
 

  • In a small bowl, whisk together ingredients for the volcano sauce; set aside.
  • Crack eggs into a medium sized bowl and beat about one minute until pale yellow and a bit frothy. Then, in a shallow dish or plate, combine corn starch, flour and salt and mix together.
  • Add half of the chicken pieces into the eggs and coat well. Then, dredge the egg-coated chicken into the cornstarch/flour mixture. Try to get off any excess egg before dredging it, if you can. Transfer chicken pieces to a plate or a wire rack. Repeat with other half of the chicken.
  • In a large skillet, add oil--use enough to coat the bottom of the pan by about 1/4 of an inch. You can also use a deep fryer if you have one!
  • Heat oil over medium-high heat. You can test to see if the oil is hot enough but sprinkling a tiny bit of flour into the oil. If the flour sizzles, the oil is hot!
  • Carefully add chicken pieces to the hot oil, making sure not to overcrowd the pan. You may need to do two batches depending on the size of your pan.
  • Fry chicken for 4-5 minutes on the first side, until golden brown. Carefully flip the chicken and cook another 2-3 minutes on the other side. I like to use a fish spatula for this. A fork or chop sticks also work!
  • When chicken is done, transfer to a paper towel lined plate.
  • In another large skillet over medium heat, add the volcano sauce. Cook for 2-3 minutes until sauce is bubbly and begins to thicken and reduce a bit. Add chicken to the reduced sauce and stir to get chicken evenly coated.
  • Sprinkle with green onions and sesame seeds, if you like and serve immediately over a bed of hot rice.
