– 6 lbs. chicken thighs  – 2 tbsp olive oil  – 1/3 cup brown sugar – 1 tsp smoked paprika – 2 tsp sea salt  – 1 tsp black pepper – 1 tsp garlic powder – 1 tsp onion powder – 1 tsp dry mustard – 1/2 tsp cayenne pepper  – 1 cup BBQ sauce

Start by...

Preheating the smoker to 250°F. In a small bowl, combine brown sugar, paprika, salt, black pepper, garlic powder, onion powder, dry mustard, and cayenne pepper.

Season...

Coat each chicken thigh with olive oil. Sprinkle the dry rub over the chicken, using your hands to press the spices into the chicken.

Cook...

Place the bone-in chicken thighs in your preheated smoker, tucking in the loose sides so they don’t dry out. Close the lid and smoke for one hour.

After the one-hour, brush the chicken thighs with BBQ sauce, close the lid and continue to cook an additional 30 minutes to an hour.

Don’t be tempted to dig into the chicken too soon. Let the chicken rest after removing it from the heat to allow the juices to redistribute back into the meat.
