Creamy Chipotle Chicken Pasta

Cook pasta al dente according to package instructions. Cook it on the lower end of what the directions say. So if it says 9-11 minutes,  boil for 9 minutes.

Cook chicken and remove from pan.

Add butter, garlic and chipotle chilis with adobo sauce. Cook a few minutes.

Whisk cream and chicken stock with 2 tsp cornstarch; add to pan. Cook a few minutes until sauce is thickened.

Add in corn, tomatoes and chicken. Give everything a big stir and cook until heat through.

Remove from heat and stir in Parmesan cheese.
