Easy Egg Muffins
These egg muffins are the perfect start to your day! Prepare them ahead of time and have them for a quick, high protein breakfast all week long!
Servings: 12
Ingredients
- 7 large eggs
- 1/4 cup milk
- 1 cup shredded cheese (your fave!)
- 1 cup toppings (see notes)
- 1 tsp salt
- pepper to taste
Instructions
- Preheat oven to 375; spray a 12 cup muffin tin with cooking spray.
- Mix together eggs, milk, salt and pepper.
- Fill each muffin cup half full with egg mixture.
- Into each cup, drop in your favorite toppings right on top of the egg mixture.
- Top each cup with cheese.
- Make about 20 minutes until set.
Notes
Toppings: Sky's the limit! Some of my faves include onion, Canadian bacon, chopped tomato and bacon bits. Just make sure everything is finely chopped!
These keep in an airtight container in the fridge for about 5 days. Heat them up in the microwave for about 20 seconds.

Hey Casey- tried these for supper tonite, but made them into 6 muffins using a jumbo muffin pan. I served them Joanna Gaines biscuits and they were yummy!
